My collection of keto cookie bar recipes is jam-packed with delicious, easy cookie bar treats.  All the cookie recipes are low in carbs, sugar-free, gluten-free, and keto-friendly.

No matter your favorite cookie bar, you’re sure to find a keto option that is a great substitute for its high-carb counterpart.

Imagine cookie bars that easily fit into the macros of a keto diet.

That's right; you can enjoy bar cookies on the keto diet while still staying in ketosis!  All that is needed are a few key ingredient swaps, and you can have these sweet treats back in your life.

The great thing about bar cookies is that you get all the delicious, fresh-baked goodness of a cookie without the extra time of scooping or rolling out individual cookies! Winning!!!

Instead, you have (in most cases) an almost cake-like batter that is baked in a square or rectangle baking dish and sliced into bars. All the magic of a cookie in way less time!

The result is a perfectly portioned slice of keto cookie heaven without any extra fuss or carbs!

Keto bar cookies are perfect for making when you have last-minute guests, need an after-school treat for the kids, or any day of the week when you want something sweet without compromising your keto goals.

Whether you’re looking for a low-carb bar cookie that reminds you of your traditional, sugar-filled favorite or something new, these keto recipes will satisfy any craving for a carb-filled treat. 

What You’ll Need To Make Keto Cookie Bars

In order to make these recipes, you will need a few key items. Thankfully, these materials are also pretty standard kitchen tools. 

  • 8x8 Baking dish
  • Electric mixer
  • Spatula
  • Mixing bowls

The Best Sugar Substitutes For These Cookies

When it comes to which sugar substitute is best for keto bar cookies, I have a few recommendations. If you’re a regular reader here, you know we’re huge fans of Lakanto Monk Fruit.

I love that Lakanto Monk Fruit is all-natural. Its sweetness comes from antioxidants called mogrosides instead of fructose or sucrose. It has zero calories and zero glycemic impact. 

Another fantastic option is Swerve, which is another erythritol blend.  It works well in most keto recipes and is a great choice if you are looking for a sugar substitute with no bitter aftertaste and measures like sugar.

Plus, like Lakanto, Swerve has a 0% impact on blood sugar.

I know some of you are stevia fans; if that's you, you can use the stevia and erythritol-based brand Pyure in most recipes as well.

However, it's important to note that if you are using Pyure you will want to use half the amount called for in the recipe since it's a much sweeter option. 

If a recipe calls for a brown sugar flavor profile, I recommend you use one of the following Lakanto brown sugar substitutes: Surkin Gold or Swerve brown sugar. All of these work well and are interchangeable in these recipes for keto bar cookies.

When a recipe calls for a powdered sugar substitute, I defer to the only two I use regularly. My favorite brands are Lakanto's powdered monk fruit and Swerve confectioner's sugar substitute.
