The use of both almond or coconut flour in place of cornmeal works really well and will fool your taste buds into thinking you’re having the real thing.
Part of the reason they work so well is that my recipes treat this alternative flours as if it was cornmeal.
One of the ways I mimic the flavor of cornbread is to bake all my Keto Cornbread Recipes in a cast-iron skillet. This is because a cast iron skillet retains heat very well and creates the perfect crust.
This list includes some recipes that combine a keto chili with a low carb cornbread topping. Like our keto tamale pie that features all the Southwestern flavors of a traditional tamale pie minus the high carbs. In this recipe, we combine a chunky keto chili with a low carb cornbread topping for a complete Tex Mex meal.
I also have a keto chicken chili cornbread casserole that combines a quick keto chicken chili with a layer of low carb cornbread. It’s one complete easy skillet meal. In this case, the cornbread topping uses coconut flour for a nut-free option.

After several requests for a coconut flour cornbread option, I also created keto cornbread recipes that are made with coconut flour. This meant that I was now able to create recipes that give people with nut allergies a delicious alternative.
Not only are they a nut-free recipe but the use of coconut flour makes these keto cornbread recipes extra low in carbs. Plus the use of coconut flour makes it more economical than the recipes that use nut flours.

The use of a corn extract is really effective in getting the flavor of cornbread without the use of any corn.

You’ll find that I refer to my cast-iron skillet often because I love how well a low carb cornbread bakes in it. Hilda, I just made keto chili and needed a good keto recipe for cornbread. I did not have the corn syrup but it is delicious without as well. It taste like cornbread, has the texture of cornbread. It was a nice accompaniment to the chili. Today I am eating a slice with butter and monk fruit sprinkled on top. Now it is a sweet treat. I think it would be delicious as a strawberry shortcake with whipped cream. I just ordered your new desserts cookbook, cannot wait till July! Love all of your recipes.
