Keto Cherry Coffee Cake With Fresh Cherries

This delicious keto cherry coffee cake is made with fresh cherries and a buttery sweet streusel topping. It’s the perfect summertime keto treat that can be enjoyed for breakfast, brunch, or an after-dinner dessert.

Made with a combination of almond and coconut flour, it has the perfect texture and makes it grain-free, gluten-free, & sugar-free!

I’ll confess that I’m a huge fan of cakes, and coffee cakes, in particular, have my heart. This would explain the large collection of keto cakes and why it’s only going to keep growing.  

That being said, this low-carb cherry coffee cake was inspired by our keto sour cream coffee cake a recipe that is quite popular on the site. 

In the case of this coffee cake, I reduced the streusel topping and added fresh cherries to the batter. A little zest of lime, as well as lime extract, compliments the flavor of fresh cherries beautifully.

Can You Have Cherries On Keto?

If you are wondering if cherries can be eaten while doing keto, the short answer is that you can but in moderation. 

Although most fruits are high in carbohydrates due to the natural sugar, it’s possible to enjoy cherries while doing a ketogenic diet as long as you only consume them in small amounts.

There are 18 net carbs in half a cup of fresh cherries. In this recipe, I added 1 cup of fresh sliced cherries, which is enough to infuse the coffee cake with flavor and still stay within your keto macros.

The key to enjoying higher-carb fruit is to plan your meals so that you do not go over your daily allotted carbs. This way, you won’t feel deprived and stay committed to your keto diet easily. 

That being said, cherries are high in nutrition and antioxidants and a great source of fiber, vitamin C, potassium, and polyphenols. I wouldn’t advocate just snacking on them since it will be hard to eat just a few. 

Using fresh cherries sparingly in a baked good is a nice way to enjoy seasonal fruit and not go overboard. 

Is There Coffee In Coffee Cake?

Ever wonder how the coffee cake got its name? Or if there is any coffee in a coffee cake? Let me just clarify this point for you.

You see, there is actually zero, nada, coffee in coffee cake. It’s simply referring to the fact that it goes so well with coffee. 

Not a coffee drinker? No problem; you can enjoy this type of cake with tea, your favorite hot beverage, or all by itself.

It’s basically referring to a moist, tender cake that is topped with a crumb, streusel topping, also known as Streuselkuchen that originated in Germany. 

The way I see it there was some lovely grandma in Germany who wanted to create a cake for her family that would accompany their coffee ritual and tada, the coffee cake recipe, was birthed.

I have a few tips you will want to keep in mind when making this keto-friendly cherry coffee cake. After all, you want your coffee cake to be amazing enough for everyone in your family to enjoy including those who are not doing keto.

  • When making this fresh cherry gluten-free coffee cake, I recommend that all your ingredients be at room temperature. Doing so will allow your batter to blend easily and ensure that your coffee cake is moist.
  • I added both fresh lime zest and lime extract for this cake, but you can opt to only use vanilla extract or almond extract if you are not a fan of cherry lime flavor.
  • Pit your cherries easily by removing the stem and holding the fruit between two fingers. Then use a chopstick or a pastry tip and gently press down into the pit and push it out of the cherry. 
  • I made my coffee cake in a round 10-inch springform pan. However, you can also bake it in a 10X10 inch square pan too.

Best Sugar Substitute For Keto Fresh Cherry Coffee Cake

When it comes to choosing which sugar substitute to use for this sugar-free cherry coffee cake, I have several for you to choose from. 

My go-to choice is Lakanto Monk Fruit because the texture is spot-on since there is barely any aftertaste. It is a monk fruit and erythritol blend.

Lakanto Monk Fruit gets its sweetness from antioxidants called mogrosides, instead of fructose or sucrose. It’s why it’s a great all-natural sugar substitute and has zero calories and zero glycemic index.

I’m also partial to  Swerve an erythritol blend. Unlike other natural sweeteners like stevia, it has no bitter aftertaste and measures just like sugar.

Swerve is the name brand of Erythritol it’s unlike other sugar alcohols that have a 0 % impact on blood sugar.

You could also use the stevia and erythritol-based brand Pyure for most of my baked goods. 

But if using Pyure, you will want to use half the amount called for in this recipe since it’s much sweeter.

Lastly, if you can easily find a more natural sugar substitute, you can also use Splenda with great success. 

You will want to use the Splenda that has a bulking agent. It’s the one that comes in larger bags.

I don’t recommend Splenda Bake because it’s actually half sugar, half sucralose product and will be too high in carbs to be considered keto-friendly.

This delicious keto cherry coffee cake is bursting with the flavor of fresh cherries and lime zest. Made with a combination of almond and coconut flour this low-carb cherry coffee has the perfect texture.

Instructions

  1. Grease a 10-inch springform pan with butter.
  2. Wash, dry, and pit the cherries by removing the stem and holding the fruit between two fingers. Then use a chopstick or a pastry tip and gently press down into the pit and push it out of the cherry. Slice the cherries in half and set them aside.
  3. Preheat oven to 350 degrees.
  4. In a large bowl combine the sifted almond flour, coconut flour, sugar substitute, baking powder, and salt. Set aside.
  5. Melt the butter and allow it to cool.
  6. In a medium-sized bowl, combine the cooled melted butter, sour cream, lime extract, lime zest, and eggs until they are well combined. Set aside.
  7. Add the wet mixture to the large bowl of dry ingredients. With a spatula mix the batter until well incorporated.
  8. Fold in 1/2 of the sliced cherries into the batter.
  9. Spread the batter to the prepared springform pan.
  10. Prepare the streusel topping and then sprinkle on the surface of the coffee cake.
  11. Add the remaining sliced cherries onto the surface of the cake pressing them gently onto the coffee cake.
  12. Bake the cake for 35-45 or until the crumbs are lightly browned and an inserted toothpick comes out clean.
  13. Allow the coffee cake to cool for 20 minutes on a baking rack before slicing and serving.
  14. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 weeks.

Streusel Topping

  1. In a small bowl, combine the granulated sugar substitute, almond flour, coconut flour, and salt.
  2. To the dry ingredients add the thinly sliced cold butter and cut in the butter until the mixture resembles coarse crumbs. Set aside.
