Rhubarb is also a great source of antioxidants, fiber, and vitamin K. It’s even being called by some people as the next “superfood”.

Now you may be thinking, Hilda what if I can’t find any rhubarb in the produce section of my grocery store? Well, that’s the beauty of rhubarb, most grocery stores will carry frozen rhubarb which makes this girl very happy!
Being a South Florida native it is difficult for me to get my hands on fresh rhubarb because it just doesn’t grow here because our winter is sadly, non-existent.
When it is in season, in the summer, it can be found but not as abundantly as other fruits and vegetables.
For this reason, I have used frozen sliced rhubarb to make delicious keto desserts. This makes it possible to enjoy rhubarb recipes without sugar at any time of the year!
And the best part is, you don’t even need to defrost it before adding into most recipes!
