Making this gluten-free spinach chicken casserole really is quick and simple. You’ll start off by using a preheated oven and then lightly greasing with olive oil the bottom of a 9×13 inch baking dish.

Next, you’ll place an entire bag (eight ounces) of fresh spinach into the prepared casserole dish and press the spinach down before drizzling the top of the spinach with the remaining tablespoon of olive oil.

Prepare the creamy sauce by mixing together in a small bowl the sour cream or Mexican crema, full-fat mayonnaise, grated parmesan cheese, and spices. Then set the sauce aside.

Next, you’ll add the boneless chicken breasts that have been seasoned and sliced in half crosswise on top of the bed of spinach.

Then spread the creamy sauce evenly over the surface of the chicken using a spatula.

Top with the shredded mozzarella cheese and then bake in the preheated 375-degree oven for about 45 minutes or until the spinach wilts and the chicken breasts are cooked through and the casserole is lightly browned.
