- 4 cups of blueberries
- ⅓ cup of granulated sugar substitute
- 3 tablespoons of lemon juice
- 1 teaspoon of lemon zest
- ⅛ of teaspoon of sea salt
Low Carb Crisp Topping
- 1 cup and 2 tablespoons of almond flour
- 3 tablespoons of granulated sugar substitute
- ⅛ teaspoon of sea salt
- ¼ teaspoon of cinnamon powder
- ¼ teaspoon of ground ginger
- ⅛ teaspoon of nutmeg powder
- 6 tablespoons of unsalted butter, cold
- ⅓ cup of chopped walnuts
Instructions
Keto Blueberry Filling
- Preheat oven to 375 degrees.
- In a large bowl toss the blueberries, sugar substitute, lemon juice, lemon zest, and salt.
- Grease with butter an 8-inch baking dish with softened unsalted butter. Evenly add the blueberry filling to the prepared baking dish.
Keto Crisp Topping
- In a medium-sized bowl combine the almond flour, chopped walnuts, sugar substitute, cinnamon powder, ginger powder, nutmeg powder, and salt.
- Cut the cold butter into small pieces and add to the flour mixture. Using your fingers press the butter into the dry ingredients until it forms pea-size pieces.
- Sprinkle the almond flour topping to the top of the blueberries. Cover the low carb crisp with aluminum foil and bake covered for 40 minutes. Then uncover the crisp and bake an additional 10-15 minutes until golden brown.
- Serve warm with whipped cream or low-carb vanilla ice cream.
- Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 weeks.
