Rather than using regular ketchup as the basis of this barbecue sauce, use sugar-free ketchup. It’s a great way to get that classic meatloaf flavor without the carbs.

Many meatloaf ingredients include brown sugar in the topping, but that immediately does not make it a keto-friendly meatloaf recipe.

The following are my tips for a great meatloaf that just so happens to be low in carbs and rivals regular meatloaf. 

  1. Use a combination of ground beef and pork for optimal flavor and moisture.
    One of the secrets to the best meatloaf recipe is to use a combination of ground beef and pork. The pork adds fat and moisture, while the beef provides flavor and texture. For this keto meatloaf recipe, we recommend using 85/15 ground beef (which has 85% lean meat and 15% fat) combined with ground pork.
  2. Use almond flour in place of traditional bread crumbs.
    For a gluten-free meatloaf, this recipe uses a combination of almond flour and parmesan cheese in place of bread crumbs. Not only does this make the meatloaf gluten-free, but it also helps to keep it low-carb and keto-friendly. If you don’t want to use almond flour, you can use crushed pork rinds instead.
  3. Watch out for dryness
    One common complaint about meatloaf is that it can be dry. To avoid this, be sure not to overmix the meat mixture. It’s a sure way to make it tough. When you mix the ingredients, be sure to do so gently until they are just combined. This recipe adds plenty of moisture in the form of eggs, a medium carrot that has been finely chopped, and the use of ground pork. Another tip is to bake your meatloaf covered for the first part of the cooking time, which will help to trap moisture. Cook until it’s just about cooked through since it will continue to cook during the time it rests.

How To Make A Keto-Friendly Meatloaf

To make this meatloaf, you’ll start by preheating the oven to 350 degrees F.

Then, in a large bowl, you’ll combine the dry spices, grated parmesan cheese, and almond flour.

To the dry ingredients, you’ll then add ground beef, ground pork, onions, minced cloves, chopped carrot, Worcestershire sauce, soy sauce, and eggs.

Combine the mixture well until just combined. Otherwise, you risk your meatloaf being tough and dry.  

Next, you’ll transfer the prepared meatloaf into a greased 9×5-inch loaf pan and cover it with aluminum foil. Bake the meatloaf for 30 minutes.

While the meatloaf cooks, you’ll prepare the sugar-free ketchup sauce by mixing all the ingredients in a small bowl.

Once the meatloaf has cooked for 30 minutes, you’ll take the meatloaf out of the oven, remove the foil wrap, and spread the ketchup sauce evenly on top of the meatloaf.

Then return it to the oven and bake for another 15-20 minutes until cooked through and the glaze has set.

The meatloaf will be done when it reaches an internal temperature of 160 degrees F with a meat thermometer.

Be sure to allow the meatloaf to rest for 10 minutes before slicing. This resting period is important as it allows the juices to redistribute, resulting in a moister and tastier meatloaf.

Store the meatloaf in an airtight container; I prefer to use a glass one for up to three days or freeze it for longer.

This keto meatloaf recipe comes out moist and delicious every time. It's the ultimate gluten-free meatloaf that uses a combination of ground meat and pork and almond flour as a substitute for the bread crumbs. It features a sweet and tangy ketchup sauce that is finger-licking good!

  6. Allow the meatloaf to rest for about 10 minutes before slicing.
  7. Store leftovers in the refrigerator in an airtight container for up to 3 days or freeze for up to 3 weeks.
