My recipe for keto pistachio fluff is a so simple and requires no cooking or baking. With just a few simple ingredients, you can whip up a delicious keto dessert in no time.

There is no need to add high-carb ingredients to get the flavor of the popular old-fashioned recipe. Tasty childhood memories will come flooding back without gobs of sugar. You’re welcome!

Tools You’ll Need

  • Large mixing bowl
  • Stand mixer or hand mixer
  • Spatula
  • A large serving bowl or individual small dessert dishes

How To Make A Keto Pistachio Dump Salad

To prepare this dessert salad, start by beating softened cream cheese, sour cream, sugar substitute, pistachio extract, pineapple extract, green food coloring, and salt in a large bowl on high speed.

Be sure to scrape the sides of the bowl several times to ensure all ingredients are well-mixed.

Next, add the cold, heavy whipping cream to the cream cheese mixture and whip for 3 to 5 minutes until the mixture is fully combined and achieves a light, airy texture.

Gently fold in the sugar-free coconut flakes until they are fully incorporated. Finally, sprinkle the top with chopped pistachios for added crunch.

For a creamy version, leave out the coconut flakes and add one teaspoon of coconut extract instead.

Store the pistachio salad in an airtight container in the refrigerator for up to five days, or freeze it for up to three weeks for later enjoyment.

Sugar Substitute Options

When it comes to choosing which sugar substitute to use for this sugar-free pistachio recipe, I have several for you to choose from.

My absolute favorite is Lakanto Monk Fruit, probably because the texture is spot on, and there is barely any aftertaste. 

I am also partial to the brand Swerve, which is an erythritol blend.

Like Lakanto, it uses sugar alcohol and has a 0% impact on blood sugar. This, my friend, is a major win! You could also use the stevia and erythritol-based brand Pyure for this cheesecake recipe.

But if using Pyure, you will want to use half the amount called for since it’s a lot sweeter. Lastly, if you can easily find a more natural sugar substitute, you can also use Splenda with great success.

This keto pistachio fluff recipe is a no-bake cheesecake that uses only natural, wholesome ingredients. It does not use boxed instant pistachio pudding to get its rich, smooth, creamy pistachio flavor. Plus, it's also grain-free, gluten-free, and keto-friendly!

  • 1/4 cup of chopped salted pistachios
