Keto Cream Of  Spinach Soup

Keto Cream Of Spinach Soup

There are a lot of recipes out there for cream of spinach soup, but most of those recipes are thickened with a flour roux.

Bravenly premium supplements

Unfortunately, adding flour results in a recipe that does not fit a keto lifestyle since the carb count is much higher.

Not to mention that many who come to the keto diet are also shying away from gluten in their diet.

That’s why our creamy keto-friendly spinach soup uses heavy cream to give it its velvet-smooth texture, and it’s what thickens the soup beautifully.

This recipe gives you the option to use chicken or vegetable broth, so individuals wanting a keto vegetarian option can do so easily.

This recipe for keto cream of spinach soup is straightforward to make and uses simple-to-source ingredients.

It’s the easy, low carb soup you will want to make all soup season.

You’ll start by sautéing the chopped onions and garlic in butter until they are translucent and tender in a 5-quart pan.

Then, you’ll add the spinach to the onion mixture and cook down the spinach until it’s completely wilted. This should take anywhere from 5-7 minutes over medium-high heat.

To the wilted cooked spinach, add the heavy cream, room-temperature cream cheese, broth, and spices, and cook over medium heat until the spinach soup thickens, about 10–15 minutes.

Once the spinach soup has had time to reduce and thicken, you’ll add the Parmesan cheese and stir until the cheese melts into the soup and is fully incorporated.

Allow the soup to cool slightly before pureeing it using a blender or immersion mixer.

How To Safely Puree Hot Soup in Blender

Anytime you are pureeing soup in a blender, it’s essential to allow the soup to cool for a few minutes before blending. This can take anywhere from 5 to 10 minutes.

Before adding the soup to the blender, be sure to remove the center cap from the lid of your blender. Then, place a folded kitchen towel over the top of the blender. Hold the towel in place with your hand firmly; this is key so that you do not risk getting burned by the soup as it progresses.

Adding the towel will allow the steam to escape safely. It’s also crucial to fill the blender halfway. And to blend the soup in small batches.

Once the soup is fully blended, return it to the pan to heat through before serving.

Store leftovers in an airtight container in the refrigerator for up to three days. I do not recommend freezing creamy soups since they tend to separate once they thaw.
