These keto-friendly cowboy cookies are similar to the traditional recipe, except that our cookies do not use any regular flour, oatmeal, or oat flour since that would make them way too high in carbs to be allowed in a low carb diet.
However, these great keto cookies rely on mostly dry ingredients such as gluten-free flaxseed, coconut flakes, almond flour, baking powder, cinnamon powder, sugar substitutes, and chocolate chips, which gives them a great texture.
As for the wet ingredients, softened butter, eggs, vanilla extract, and peanut butter or almond butter are all you need to take your cookie game to the next level.
Ingredients Needed to Make Keto Cowboy Cookies

- Unsalted butter, room temperature
- Peanut butter or almond butter
- Granulated white sugar substitute or brown sugar substitute
- Large eggs, room temperature
- Finely milled almond flour
- Golden flax meal
- Shredded unsweetened coconut flakes
- Vanilla extract
- Baking powder
- Sea salt
- A little cinnamon powder
- Sugar-free chocolate chips
- Slivered almonds
- Chopped pecans
How to Make Keto Cowboy Cookies
To make these keto-friendly cowboy cookies, preheat the oven to 350 degrees.
Then measure the almond flour and golden flax and set aside.
In a medium-sized bowl, using an electric mixer, or a stand mixer, combine the softened butter, peanut butter or almond butter, sugar substitute, and vanilla extract. Mix until light and fluffy.
To this mixture, add the two eggs one at a time and combine until well incorporated.
Next, add the sifted almond flour, golden flax meal, coconut flakes, slivered almonds, chopped pecans, sugar-free chocolate chips, baking powder, salt, and cinnamon powder, and mix until just combined.
Be sure to scrape the sides of the mixer a few times during this process to ensure all the ingredients are well incorporated.
Using a small cookie scoop, place the dough on a lightly greased cookie sheet or parchment paper lined sheet.
Slightly flatten the keto-friendly cookies with your fingers or the back of a spoon.
Bake the cookies in the oven until lightly brown around the edges, about 12-15 minutes.
Store leftovers in an airtight container and refrigerate them for up to 5 days or freeze them for up to 3 weeks.
Best Sugar-Free Sweetener Options
As far as which sugar substitute to use for these sugar-free cowboy cookies, I have a few recommendations. If you are a regular on our site, you know I’m a huge fan of Lakanto Monk Fruit.
This is because the texture of Lakanto is spot on since there is barely any aftertaste. It is a monk fruit and erythritol blend.
If you have not given this all-natural sweetener a try, you have no idea what you are missing.
I love that Lakanto Monk Fruit is all-natural and gets its sweetness from antioxidants called mogrosides instead of fructose or sucrose. And it has zero calories and zero glycemic impact.
You can also use their brown sugar substitute, which works beautifully for this recipe.
That being said, I’m also partial to Swerve, another erythritol blend.
It works well in this keto-friendly cowboy cookie recipe and is an excellent choice if you are looking for a sugar substitute that has no bitter aftertaste and measures just like sugar.
Swerve is made from ingredients found in select fruits and starchy root vegetables and contains no artificial ingredients, preservatives, or flavors. Like Lankanto, Swerve has a 0 % impact on blood sugar.
Swerve also has a brown sugar option that is quite nice and that I can also recommend for these cookies too.
I know some of you are stevia fans; if that’s you, you can use the stevia and erythritol-based brand Pyure in this recipe.
However, it’s important to note that if you are using Pyure, you will want to use half the amount called for in this recipe since it’s a much sweeter option.
And if you are not doing keto and just looking for a gluten-free flour recipe, you can even use coconut sugar.

Best Almond Butter Options
When choosing which almond butter to use for this recipe, I recommend that you pick only products that are sugar-free. I chose to use a creamy almond butter, but a crunchy one would also work.
I prefer to use no-stir nut butters, but if that is not easily accessible for you, just give it a good stir before using it in the recipe.
