Typically scones have a biscuit-like dough that is lightly sweetened. And many recipes call for rolling and then cutting the dough prior to baking.

But this girl is all about making keto baking easier. If I can shave off some time from a recipe, you better believe I will.  Plus if there is something I’ve noticed is that many who come to the keto-diet don’t have years of baking skills under their belt. So keeping things simple just makes sense.

I added a keto lemon glaze to the top of these keto blueberry scones because well everyone knows that the flavors of lemon and blueberries are meant to go together. If this is news to you, trust me on this because these two flavors are best buds.

The glaze is not a must and leaving it out will reduce the scones by another carb but frankly, I think it elevates these keto-friendly blueberry scones so try adding the glaze at least once.

Since these keto scones have 4.4 net carbs, they can therefore easily fit into your daily macros as keto treat.

If you’re wondering how to make keto scones I’m going to share how I make keto-friendly blueberry scones easily. The following are the ingredients and supplies you’ll need plus my tips to ensure your scones turn out perfectly every time. Note that the full recipe is at the bottom of this post.

I bake my keto blueberry scones in a 9-inch cast-iron skillet. Using the cast-iron plays an important role because it allows for great even browning.

Although you could bake these in a different pan I can’t vouch for it since I have only used a cast-iron skillet. I truly believe it helps give the scones that biscuit quality.

I use either fresh or frozen blueberries when making these blueberry scones. If using frozen berries add them to the mix without defrosting. There is no need to defrost your blueberries prior to baking. Can I hear an amen for time-saving tips?

The Flours Needed For Keto Scones

These keto-friendly scones use a combination of almond and coconut flour. I use them both because each of these flours plays a role in getting the texture as close to real scones.

Best Sugar-Substitute Choices When Making Keto Scones

When it comes to sugar-substitutes you have a few choices when making keto-friendly scones.

I really like Lakanto Granulated Monk Fruit because the texture mimics sugar so well and because there is barely any aftertaste.  It’s the one sweetener that never gives me an issue.

I’m also partial to Swerve’s granulated sweetener. It’s an erythritol blend. Although it does have a cooling aftertaste in larger quantities that some people may dislike. The cooling aftertaste is not an issue since you will only be using 1/2 cup in this recipe.

You could also use the stevia and erythritol-based brand Pyure. Although you may want to use less since it tends to be sweeter. 1/4 cup will do the trick in this recipe.

Lastly, if you can’t easily find a more natural sugar substitute you can also use Splenda for baking or a generic brand of the same. It will work with great success. I know not everyone would agree with me here and I respect that but in my book, it’s still better than regular sugar.

However, when it comes to the keto lemon glaze you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

Are Berries Allowed On A Keto Diet?

In case you’re wondering if you can have berries on a keto diet the answer is yes as long as you keep the portion low.

On a ketogenic diet, we don’t eat a lot of fruit. This is because too much fructose can cause an even higher insulin response in our bodies than regular sugar.

With that in mind, on a keto diet, the fruit we do indulge in from time to time comes in the form of berries.  Why? Because they are much lower in sugar and they also deliver a lot of flavor and nutrition.

This recipe for keto blueberry scones keeps you compliant because it only uses a small number of blueberries. I added a cup of blueberries to this recipe but you can reduce that to 1/2 cup and therefore have an even lower in carbs option.

Keto Blueberry Scones

  1. Pre-heat oven to 375 degrees
  2. Grease with butter a 9-inch cast-iron skillet.
  3. Melt the butter and set aside to cool. 
  4. Using an electric mixer combine the sugar substitute, melted butter and the eggs.
  5. Add the sour cream and combine well.
  6. Next add the dry ingredients (the almond flour, coconut flour, baking powder, and sea salt) then stir until fully combined.
  7. Lastly, fold in the fresh or frozen blueberries. Note that if using frozen blueberries there is no need to defrost.
  8. Spread the batter into a fully greased 9-inch cast-iron skillet. If you do not own a cast-iron skillet, grease a round 9-inch cake pan
  9. Bake for 25-30 minutes or until an inserted toothpick comes out clean.
  10. Store your keto blueberry scones in the refrigerator for up to 5 days or freeze for up to three weeks.

  1. Combine the confectioners sugar substitute with the 2 tablespoons of lemon juice and l1/2 teaspoon of lemon extract.
  2. Then add 1 to 2 tablespoon of heavy whipping cream to thin the glaze. Start with 1 tablespoon of cream and more if needed.
  3. Drizzle the top of the fully cooled keto blueberry scones and allow the glaze to set before eating.
