Keto Cranberry Orange Scones

These easy keto cranberry orange scones are bursting with the bright flavor of orange and antioxidant-rich cranberries. And the drizzle of orange perfumed glaze will have you thinking you are cheating.

But you are not since these scones are sugar-free, grain-free, gluten-free, and keto-friendly. Allowing you to stay in the ketosis zone and still feel indulgent.

With this in mind, I can’t think of a better way to celebrate Christmas morning than with a quick low carb cranberry scone recipe to help rouse up your loved ones. That’s right it’s a keto recipe your entire family will welcome.

Keto Cranberry Orange Scones

This recipe uses fresh cranberries since dried cranberries can be loaded with sugar unless you have the time to make your own.  Which frankly takes a little more commitment than I am willing to put forth this time of the year. So fresh cranberries it is. 

For some years, finding fresh cranberries can be a bit of a challenge. And it’s why as soon as they hit the stores I am loading up my freezer with bags to ensure I have them always on hand. The best part of freezing cranberries is that they are always available.

Plus you can use frozen cranberries straight from the freezer. That’s right no need to defrost them. I told you this was an easy peasy recipe.

How To Make Keto Cranberry Scones

In order to make these cranberry scones failproof, I am going to walk you through some of my tips and give you a list of both ingredients and tools you’ll need to execute the recipe perfectly.

Note that the printable recipe card is at the bottom of the page but I hope you stick around for all my advice. 

The Following Are The Ingredients You’ll Need

These cranberry orange scones are super easy to make since it’s just a matter of mixing and then spreading the dough into a well-greased cast-iron skillet. That’s right you have no need to use a pastry cutter nor do you have to roll out the dough on the counter. 

I encourage you to measure all your ingredients ahead of time this will help save you time and make the keto baking process easier. Another tip is you have your eggs at room temperature since this ensures your scones are light and fluffy.

You can easily bring your eggs to room temperature by adding them into a bowl of hot water for 5 minutes if you are pressed for time. 

You’ll notice that in all my keto scone recipes I use melted unsalted butter and sour cream. I do so for both flavor and texture reasons.  So I don’t recommend you substitute these ingredients because I can’t guarantee you will have the same results. 

The Tools You’ll Need 

With only a few baking tools you can easily make these scones, the following are what I recommend. 

I’m a great fan of using a cast-iron skillet when making my scones. I feel that the scones bake more evenly and it allows for the scones to have a perfect crust. But if you do not yet own one then you can alternatively use a 9-inch baking pan it just won’t produce the same texture.

The Sugar- Substitute Options

When it comes to choosing which sugar substitute to use for keto scones, I have several for you to choose from.

My favorite sugar substitute is Lakanto Monk Fruit because the texture is spot on and since there is barely any aftertaste. It is a monk fruit and erythritol blend, and it’s one to try if you have not done so.

Lakanto Monk Fruit gets its sweetness from antioxidants called mogrosides, instead of fructose or sucrose. This is why it’s a great all-natural sugar substitute. Plus it has zero calories and zero glycemic index. 

I’m also partial to Swerve which is an erythritol blend. Similar to Lakanto I find it has no bitter aftertaste and measures just like sugar.

It’s also a sugar substitute that browns and caramelizes just like sugar. Swerve is made from ingredients found in select fruits and starchy root vegetables and contains no artificial ingredients, preservatives, or flavors. It’s a sugar alcohol that has a 0 % impact on blood sugar.

You could also use the stevia and erythritol-based brand Pyure for these cranberry orange scones. But if you decide to use Pyure you will want to use 1/2 the amount called for in this recipe since it’s a much sweeter option.

Lastly, if you can easily find a more natural sugar substitute you can also use Splenda with great success.

You will want to use the Splenda that has a bulking agent. It’s the one that comes in larger bags. I don’t recommend Splenda Bake because it’s actually half sugar half sucralose product and will be too high in carbs to be considered keto-friendly.

However, when it comes to keto orange icing for these cranberry scones you will have to use a confectioner sugar substitute. Both Lakanto and Swerve have great ones for you to choose from.

These Keto Cranberry Orange Scones​ are a delicious breeze to make. They are bursting with the flavor of fresh cranberries and orange zest for one seasonal treat the entire family will love.

Ingredients

Keto Cranberry Orange Scones

Keto Orange Glaze

  • 1/2 cup of confectioners' sugar substitute
  • 2 tablespoons of lemon juice
  • 1/2 teaspoon of orange extract
  • 1 to 2 tablespoon of heavy whipping cream
  • 1 tablespoon of fresh orange zest, to sprinkle on the top of glazed scones

Instructions

Keto Cranberry Orange Scones

  1. Pre-heat oven to 375 degrees
  2. Grease with butter a 9-inch cast-iron skillet.
  3. Melt the butter and set aside to cool. 
  4. Using an electric mixer combine the sugar substitute, melted butter, orange zest, orange extract, and eggs.
  5. Add the sour cream and combine well.
  6. Next add the dry ingredients (the almond flour, coconut flour, baking powder, and sea salt) then stir until fully combined.
  7. Lastly, fold in the fresh or frozen cranberries. Note that if using frozen cranberries there is no need to defrost.
  8. Spread the batter into a fully greased 9-inch cast-iron skillet. If you do not own a cast-iron skillet, grease a round 9-inch cake pan
  9. Bake for 25-30 minutes or until an inserted toothpick comes out clean.
  10. Store your keto cranberry scones in the refrigerator for up to 5 days or freeze for up to three weeks.

Keto Orange Glaze

  1. Combine the confectioner's sugar substitute with the 2 tablespoons of lemon juice and 1/2 teaspoon of orange extract.
  2. Then add 1 to 2 tablespoon of heavy whipping cream to thin the glaze. Start with 1 tablespoon of cream and more if needed.
  3. Drizzle the top of the fully cooled keto cranberry scones then add the orange zest to the surface of the scones and allow the glaze to set before eating.
