- Baking Powder: To help the bread rise and keep it from being too dense. Since almond flour lacks gluten, a good leavening agent is essential for giving the loaf structure and lightness.
- Sea Salt: A pinch of salt balances the sweetness and enhances the overall flavor profile, ensuring the taste isn't flat.
- Eggs: Since this is a quick bread, the eggs help the loaf hold together without crumbling while contributing to its rich texture. It acts as a binder and provide structure and moisture

Cranberries bring tartness and a pop of color, while the white chocolate adds creamy sweetness and a touch of indulgence. Frozen or fresh cranberries both work, and there's no need to thaw them ahead of time. Whole cranberries are left intact in this recipe for a more festive appearance and texture.
- Sugar-Free Vanilla Glaze: To finish the loaf, a simple drizzle of sugar-free glaze is drizzled over the top. It's made from a confectioners-style sweetener, heavy cream, and a dash of vanilla extract with a pinch of salt. How To Make This Sugar-Free White Chocolate Cranberry Bread

Start by preheating your oven to 350°F and preparing your loaf pan. You can use a 10-inch loaf pan or two smaller 6-inch pans. Line them with parchment paper or grease them well to prevent sticking.
While the oven heats, measure out your almond flour and sift it into a bowl to remove clumps.
Add the baking powder and salt, and stir everything together. Set this dry mixture aside.
In a large mixing bowl, use an electric hand mixer or stand mixer to cream together the softened butter, cream cheese, vanilla extract, and your chosen granulated sugar substitute.
Blend this mixture until it's light, fluffy, and well incorporated. Then, add the eggs one at a time, mixing well between each addition and scraping down the sides of the bowl as needed to ensure everything is evenly combined.
Once the wet ingredients are fully blended, slowly add in the almond flour mixture. Mix until the batter is smooth and thick.
Gently fold in the whole cranberries and sugar-free white chocolate chips, being careful not to over-mix.
Transfer the batter into your prepared pan, smoothing the top with a spatula.
Bake the bread in the center of the oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.

If you're using smaller pans, start checking for doneness at around 35 minutes.
Once baked, let the loaf cool in the pan for few minutes, then carefully remove it and transfer to a wire rack to cool completely.
While the bread cools, prepare the glaze by whisking together a powdered sugar substitute, heavy cream, vanilla extract, and a pinch of salt until smooth.
Drizzle the glaze over the fully cooled loaf just before serving or wrapping it up for storage.
This bread can be stored in the refrigerator for up to five days or frozen for several weeks.
To serve from frozen, let it thaw in the refrigerator overnight.

Yes! Frozen cranberries work just as well as fresh ones. No need to thaw beforehand - they bake beautifully straight from the freezer.
Should I Chop the Cranberries?
It's not necessary. Leaving them whole saves time and gives the bread a festive, colorful look. Plus, the cream cheese in the batter balances out the tartness.
Best Sugar Keto Sweetener Options
Here are the low-carb sweeteners that work well in this recipe:
I really like Lakanto Monk Fruit Sweetener because the texture is spot on, there is barely any aftertaste, and it uses only natural ingredients.
This is a great one, especially if you are new to sugar substitutes, because it mimics sugar the most, in my opinion.
I'm also partial to Swerve, an erythritol blend, although you should keep in mind that it does have a bit more of a cooling aftertaste that some people dislike.
Alternatively, you could also use a stevia- and erythritol-based brand like Pyure.
This is if you prefer to use stevia in your baked goods. If you go this route, you need to reduce the amount by half since it is twice as sweet.
Lastly, when it comes to icing, you will have to use a confectioner's sugar substitute. Both Lakanto and Swerve have great ones.
Recommended Sugar-Free White Chocolate Chips
As far as which white chocolate chips work for this recipe, my favorite for sugar-free white chocolate chips is Lily's White Chocolate Chips. It's stevia-based and, in my opinion, doesn't have any aftertaste.
Choczero has its own no-sugar-added white chocolate chips that are sweetened with monk fruit and are a great option as well! Another stevia-based option is Bake Believe's White Chocolate Chips, which has dazzling reviews!

Keto White Chocolate Cranberry Bread (Gluten-Free)
This keto white chocolate cranberry bread features the flavors of fresh cranberries and white chocolate for an delicious seasonal treat.
Ingredients
Keto Cranberry Orange Bread Batter
- 2 ½ cups of finely milled almond flour
- 1 cup of granulated sugar substitute
- 2 teaspoons of baking powder
- ½ teaspoon of sea salt
- 8 eggs, room temperature
- 8 ounces of room temperature full-fat cream cheese
- ½ cup of room temperature unsalted butter
- 1 ½ cups of fresh or frozen whole cranberries
- ¾ cup of sugar-free white chocolate
- 1 teaspoon of vanilla extract
Keto Vanilla Glaze
- ¾ cup of confectioners sugar substitute
- 2 tablespoons of heavy whipping cream
- 1 teaspoon of vanilla extract
- ⅛ of teaspoon of salt
Instructions
Keto White Chocolate Cranberry Bread
- Preheat the oven to 350 degrees.
- Grease and line with parchment paper a 10-inch loaf pan or two 6-inch loaf pans. (note if using two smaller pans check for doneness at the 35-minute mark)
- In a medium-sized bowl measure then sift the almond flour. To the sifted almond flour add the baking powder, and sea salt, and stir. Set this aside.
- In a large bowl using an electric hand-held mixer or stand-up mixer blend the butter, cream cheese, vanilla extract, and sugar substitute until the mixture is light and fluffy.
- Next add the eggs one at a time, making sure to scrape the bowl several times.
- To the wet batter add the dry ingredients and combine until well incorporated.
- Fold the fresh or frozen cranberries into the batter. Note that if using frozen you do not need to defrost before.
- Spread the batter into the prepared loaf pan.
- Bake for 60-70 minutes or until an inserted toothpick comes out clean.
- Allow the loaf to cool in the pan for few minutes before taking it out of the pan. Then let the bread cool completely on the baking rack for before adding the icing.
- Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 weeks.
Keto Vanilla Icing
- In a small mixing bowl whisk the confectioner's sugar substitute, vanilla extract, and heavy cream. Stir until fully combined.
- Drizzle the icing over the top of the cooled bread.
