Best Chocolate Chips For Sugar-Free Chocolate Chip Ice Cream

To make this ice cream and keep it keto-friendly, you’ll need to use sugar-free chocolate chips or a finely chopped sugar-free chocolate bar.

Since regular chocolate chips are too high in carbs for this keto mint chocolate chip ice cream recipe.

Traditionally, chocolate chip ice cream recipes are made with mini chocolate chips. This is because frozen ice cream tends to make the chocolate chips hard.

Unfortunately, I have not found there to be any sugar-free brand that offers mini chocolate chips.

My solution is to chop the chocolate chips into little pieces in a food processor for a fast chop.

Alternatively, you may use a sugar-free chocolate bar that has been cut into many pieces with a sharp knife. Or even a box grater for shaved chocolate.

The following are the sugar-free chocolate brands I recommend:

How To Make This Keto Mint Chocolate Chip Ice Cream Recipe

Making this mint chocolate chip keto ice cream is super easy. The recipe is created for a 2-quart ice cream machine.

If you are using a larger ice cream maker, you can double the recipe easily.\

No ice cream maker? No problem. I also share instructions on how to make it without an ice cream maker below.

You’ll start by pouring the heavy cream, sugar substitute, mint extract, vanilla extract, green food coloring, water, and salt into a large bowl and giving it a good whisk.

f using an ice cream maker pour the mint ice cream mixture into the ice cream maker and process for about 15 minutes before adding the chopped chocolate chips to the ice cream maker.

This will help the chocolate chips from clumping together and help them be distributed evenly in the ice cream.

Continue to process the ice cream according to the manufacturer’s instructions for about 15 or 20 minutes or until the ice cream is set to your preference.

Store any leftovers in a well-covered airtight container. You will need to allow the ice cream to melt on the kitchen counter until it’s scoopable again.

No-Churn Mint Chocolate Chip Keto Ice Cream Instructions

After the ice cream mixture is made, pour the ice cream (without the chocolate chips) into a metal pan or pans depending on what you have.

Then place the ice cream into the freezer for about an hour.

At the one-hour mark, remove the ice cream from the freezer and stir in the chocolate chips with a spoon. Then place it back into the freezer.

You will repeat this step 2 more times for a total of 3 hours. The no-churn ice cream is now ready to scoop and enjoy.

If you have any leftovers, you will need to allow the ice cream to melt on the kitchen counter until it’s scoopable again.

Best Sugar-Substitutes For Keto-Friendly Ice Cream

When it comes to choosing your sweetener for this homemade sugar-free chocolate mint chip ice cream recipe, I have several low-carb options that work well.

I really like Lakanto Monk Fruit Sweetener because the texture is spot on and because there is barely any aftertaste.  Plus, it uses only natural ingredients.

This is a great one especially if you are new to sugar substitutes because it mimics sugar the most in my opinion.

I’m also partial to Swerve an erythritol blend, although you should keep in mind that it does have a bit more of a cooling aftertaste that some people dislike.

Alternatively, you could also use stevia and erythritol-based brand like Pyure.  This is if you prefer to use stevia in your baked goods. If you go this route, you need to reduce the amount by half since it is twice as sweet.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.

I know not everyone would agree with me here and I respect that but in my book, it’s still better than regular sugar.
