The chicken breasts are butterflied and then cut in half and seasoned before they get seared in a large skillet; this seals in the flavors and keeps the chicken moist.

Then onions, bell pepper, and chicken broth are added to the chicken, brought to a boil, and then reduced to a simmer.

After the chicken breasts reach 165 degrees on a meat thermometer, which takes about 5-7 minutes, the chicken is removed from the pan, and the cheese sauce is made in the same skillet.

This creamy cheesy sauce comes together quickly by adding some butter to the pan over medium heat, being sure to scrape the brown bits as the butter melts.

Then add the minced garlic, softened cream cheese, sour cream, and shredded cheese, along with the dry spices, and simmer the sauce, being sure to stir to combine all the ingredients well.

The sauce is ready in less than two minutes, at which point the diced tomatoes are stirred in, and the chicken is returned to the skillet, where it’s covered in the cheese sauce and ready to serve.

I then serve the cream chicken on a bed of cauliflower rice and garnish it with some sliced green onions.

Store any leftovers in an airtight container for up to three days or freeze for up to one month.

Some Recipe Substitutions

Although this easy keto dinner recipe calls for chicken breasts, you can use chicken thighs that are boneless. Just keep in mind that the cooking time will be longer for thighs.

Just use a meat thermometer and cook for an internal temperature of 165 degrees F.

Replace the bell pepper with one cup of sliced mushrooms for a creamy mushroom sauce option, or replace it with a 1/4 cup of chopped sundried tomatoes for a more Tuscan chicken recipe.

For extra flavor, top this creamy garlic chicken recipe with crispy bacon and garnish with fresh parsley and fresh basil.

Consider swapping the yellow onion for a red onion for a more pronounced flavor.

This keto creamy skillet chicken is an easy one-skillet meal that is made in under 30 minutes. Chicken breasts are seared, cooked and then covered in a deliciously easy cheesy sauce. Perfect for busy weeknights or when you want to impress guests.

Ingredients

Creamy Cheese Sauce

  • 2 tablespoons of unsalted butter
  • 3 garlic cloves, minced
  • 1 large onion finely chopped
  • 1 medium green bell pepper, finely chopped
  • 3 plum tomatoes, seeded and finely chopped
  • 3/4 cup of low-sodium chicken broth
  • 4 ounces of full-fat cream cheese, room temperature
  • 1 1/4 cup of shredded cheddar cheese
  • 1/4 cup of heavy cream
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon of chili powder
  • 1/4 teaspoon of chipotle powder
  • 1/4 teaspoon of cumin powder

Garnish

  • 1/3 cup of sliced green onions

Instructions

  1. Butterfly and cut in half the chicken breasts and season with salt, black pepper, paprika, chipotle pepper powder, and cumin powder
  2. Over medium-high heat in a large skillet pan, sear the chicken breasts on both sides until they are golden brown with two tablespoons of oil.
  3. Deglaze the pan with two tablespoons of unsalted butter and add the minced garlic, chopped onions, chopped green bell pepper, and chicken broth with the chicken in the pan. Cover and allow to simmer for about 10 minutes until the chicken reaches an internal temperature of 165 F on a meat thermometer.
  4. Remove the chicken breasts and keep them warm. Leave the cooked onions and garlic in the skillet. Proceed to make the creamy sauce.

Creamy Cheese Sauce

  1. In the same skillet where the chicken breast was cooked over medium heat, stir in the cream cheese and sour cream and give the mixture a good stirring until the cream cheese completely melts and is combined with all the ingredients.
  2. Next, add the shredded cheese and heavy cream and sprinkle in the dry spices. Continue to cook the sauce until all the ingredients are fully incorporated.
  3. Then, stir in the diced plum tomatoes.
  4. Once the sauce is ready, add the chicken breasts back into the pan and coat both sides of the chicken in the sauce.
  5. Serve the chicken over a bed of cooked cauliflower rice, cauliflower mash, or another side of your choice, and garnish the dish with chopped green onions.
  6. Store leftovers in the refrigerator in an airtight container for up to 3 days or in the freezer for up to 1 month.
