- Banana Extract - I love Olive Nation brand it works really well in giving that rich banana taste without it tasting fake. Your tastebuds will think you've cheated, but they would be wrong.
- Egg Yolk Powder - Adds richness and a pudding-like flavor. Note it’s pasteurized and safe to eat unbaked.
- Almond Flour Crumb Topping -Nutty and buttery; a perfect crunchy contrast.
How To Make This Recipe
To begin, bring the cream cheese to room temperature so it blends smoothly, and make sure your heavy cream is cold for the best whipping texture.
In a large mixing bowl, use an electric mixer to beat the softened cream cheese along with half of the powdered sugar-free sweetener and the salt until well combined and creamy.
Next, add half of the heavy cream and the egg yolk powder, and continue to beat the mixture until it becomes light and fluffy.
Once the mixture is airy, add the remaining sweetener along with the vanilla and banana extracts. Mix until fully incorporated, then pour in the rest of the heavy cream and whip until the fluff reaches stiff peaks and a mousse-like consistency forms.
Set aside while you prepare the almond flour crumb topping.

Creamy, fluffy, and bursting with banana flavor—this keto banana pudding cheesecake fluff is sugar-free, and topped with a buttery almond crumb!
Ingredients
- 12 ounces of full-fat cream cheese, room temperature softened
- 16 ounces of heavy whipping cream, cold
- ½ cup sugar-free powdered sweetener
- 1 ½ teaspoons of vanilla extract
- 3 teaspoons of high quality banana extract, I use the Olive Nation brand
- 3 tablespoons of egg yolk powder (pasteurized)
- ¼ teaspoon of salt
Almond Flour Crumb Topping
- 1 ½ cups of finely milled almond flour
- ⅓ cup of melted unsalted butter
- 3 tablespoons of granulated sugar substitute
- ¼ teaspoon of sea salt
Instructions
- Bring the cream cheese to room temperature and ensure the heavy cream is cold.
- In a large bowl, using an electric mixer, combine the softened cream and half the sugar-free confectioner's sugar substitute and salt. Whip until well combined. Then add half the heavy cream, and egg yolk powder to the cream cheese mixture and beat until light and fluffy.
- Next, add the remaining powder sweetener and vanilla and banana extract and combine well. Then add the rest of the heavy cream and beat until light, fluffy, and stiff peaks form.
- Proceed to make the almond flour crumb topping.
Almond Flour Crumb Topping
- In a small mixing bowl, combine the almond flour, sugar substitute, and salt.
- To the dry ingredients, add the melted butter and stir well to make a crumble topping.
- Add the low-carb banana pudding cheesecake fluff into a glass bowl or trifle dish and then sprinkle the surface of the fluff with the almond crumb topping.
- Store leftovers in the refrigerator in an airtight container for up to 5 days.
