This keto cranberry gingerbread brings together two of my favorite holiday flavors in one easy low-carb loaf. You get all those bold gingerbread spices along with bursts of tart cranberry in every slice.
Made with almond flour, golden flax meal, warm spices, and fresh or frozen cranberries, this low-carb cranberry gingerbread is also sugar-free, gluten-free, and grain-free.
What I especially love about this recipe is that it does not need frosting or a glaze. The cranberries provide just enough tartness to balance the sweetness of the loaf, while ginger, cinnamon, nutmeg, and cloves give it that unmistakable gingerbread flavor.
If you've already tried my Keto Gingerbread Loaf, think of this recipe as its cranberry-filled cousin. The addition of cranberries gives the loaf a bright pop of flavor that works beautifully with the warm spices.
It makes a lovely addition to a holiday breakfast or brunch, but it is just as delicious served as a sugar-free dessert with a cup of coffee or tea.

Why I Use Golden Flax Meal
I recommend using golden flax meal only for this keto cranberry gingerbread.
Golden flax has a milder flavor than regular brown flax meal, which makes it better suited for baked goods like this gingerbread loaf.
More importantly, I have found that regular flax meal can give this loaf a heavier, somewhat gummy texture.
For the best results, stick with golden flax meal.
The combination of almond flour, golden flax meal, and psyllium husk gives this low-carb loaf enough structure to hold together while still producing a moist crumb.
Plus, it adds extra fiber which is always a plus in my book.
Why Add Cocoa Powder To Gingerbread?
The small amount of unsweetened cocoa powder in this recipe is not there to turn the loaf into chocolate gingerbread.
Instead, it adds depth and helps give the loaf the dark, rich appearance we associate with traditional gingerbread.
Conventional gingerbread often gets its deep color and distinctive flavor from a generous amount of molasses.
Since regular molasses contains a significant amount of sugar, I use cocoa powder along with optional sugar-free molasses to help create a similar depth without relying on traditional molasses.
Do I Need The Sugar-Free Molasses?
No. The sugar-free molasses is optional.
I enjoy adding it because it helps give keto gingerbread that familiar old-fashioned molasses flavor without adding regular molasses to the batter.
However, there are plenty of bold spices in this recipe, so your cranberry gingerbread will still have plenty of flavor if you choose to leave it out.
Fresh Or Frozen Cranberries

One of the things that makes this recipe especially convenient is that you can use fresh or frozen cranberries.
If you are using frozen cranberries, there is no need to thaw them first. Simply fold them directly into the batter.
I love keeping bags of cranberries in my freezer during cranberry season so I can enjoy recipes like this well beyond the holidays.
Cranberries are naturally quite tart, which is exactly what makes them such a good match for a sweet, warmly spiced gingerbread loaf.
How To Make Keto Cranberry Gingerbread
Start by preheating your oven to 350°F and preparing an 8x5-inch loaf pan. Grease the pan well and line it with a strip of parchment paper, leaving some parchment extending over the sides. This will make it much easier to lift the baked loaf from the pan.
Using an electric mixer, beat the granulated sugar substitute with the melted and cooled butter, vanilla extract, and optional sugar-free molasses until everything is well combined.
Add the eggs one at a time, beating well after each addition.
Next, add the almond flour, golden flax meal, cocoa powder, psyllium husk powder, baking powder, and spices to the wet ingredients. Mix until the batter is fully combined.
Do not be concerned if the batter seems quite thick. That is exactly how it should look.
Gently fold the cranberries into the batter until they are evenly distributed. Remember that frozen cranberries can go straight into the batter without thawing.
Transfer the batter to your prepared loaf pan and smooth the top with a spatula.
Bake the loaf for 50 to 60 minutes or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Allow the cranberry gingerbread to cool in the pan for about 10 minutes before using the parchment paper to carefully lift it out.
Transfer the loaf to a wire rack and allow it to cool for at least another 15 minutes before slicing.
Tips For The Best Low-Carb Cranberry Gingerbread

Measure and sift the almond flour. Measuring the almond flour first and then sifting it helps remove clumps and gives you a more consistent batter.
Use golden flax meal. This is one ingredient I do not recommend swapping for regular brown flax meal because it can change the texture of the loaf.
Expect a thick batter. Keto quick bread batters made with almond flour, flax, and psyllium are often considerably thicker than traditional wheat-flour batters.
Don't thaw frozen cranberries. They can be folded directly into the batter.
Fold the cranberries in gently. You want them distributed throughout the batter without crushing them.
Start checking at 50 minutes. Ovens and loaf pans vary, so use the baking time as a guide and check the center of your loaf for doneness.
Give it time to cool. Allowing the bread to cool before slicing helps the crumb set and makes it easier to cut clean slices.
How To Store Keto Cranberry Gingerbread
Store leftover keto cranberry gingerbread covered in the refrigerator for up to five days.
You can enjoy the slices chilled, bring them to room temperature before serving, or gently warm an individual slice if you prefer.
Can You Freeze This Keto Cranberry Gingerbread?
Yes. This low-carb cranberry gingerbread freezes very well, making it a helpful make-ahead recipe during the busy holiday season.
Allow the loaf to cool before wrapping it well for freezing.
You can freeze the entire loaf or individual slices for up to three weeks.
Freezing individual slices is especially convenient because you can take out only what you need.
Allow the bread to thaw before serving.
Frequently Asked Questions
Yes. Fresh and frozen cranberries both work in this recipe.
There is no need to thaw frozen cranberries before adding them to the batter.
I recommend fresh or frozen cranberries for this particular recipe.
Most conventional dried cranberries contain added sugar, and they also have a very different moisture level and texture from fresh cranberries.
I recommend sticking with golden flax meal.
In my testing, regular flax meal can produce a heavier, gummier texture. Golden flax meal also has a milder flavor that works better in this gingerbread.
No. There is only a small amount of cocoa powder compared with the rest of the ingredients.
It is primarily there to deepen the color and add richness to the gingerbread rather than give the loaf a noticeable chocolate flavor.
Absolutely. Molasses extract adds another layer of traditional gingerbread flavor, but the recipe still works without it.
The ginger, cinnamon, nutmeg, and cloves provide plenty of warm spice.
