Low-Carb Peanut Butter Chocolate Chip Scones

Traditional scones rely on wheat flour and sugar, but these beauties are completely grain-free, low-carb, and refined sugar-free.
Instead of cutting cold butter into flour (which can be a messy process), these scones use a simple stir-and-spread method. This makes them ideal even for beginner keto bakers.
You won't need any fancy equipment, and bonus points if you have a cast-iron skillet, though a round cake pan works just as well!

How To Make These Easy Keto Scones

To start, preheat your oven to 350°F (175°C) and lightly grease a cast-iron skillet or round cake pan.
In a large mixing bowl, combine the almond flour, coconut flour, your granulated sugar substitute of choice, baking powder, and a pinch of sea salt.
Stir the dry ingredients together until evenly mixed. Next, add in the sour cream, peanut butter, eggs, melted butter, and vanilla extract.
Mix everything thoroughly until a thick dough forms.
Once the base dough is ready, gently fold in the sugar-free chocolate chips until they're evenly distributed throughout.
Transfer the dough into your prepared skillet or pan and use a spatula or clean hands to spread it evenly into a circular shape.
Smooth the top as best you can, then place the pan in the oven and bake for about 25 to 30 minutes.
You'll know the scones are done when the top is golden brown and the center feels set when lightly touched. After baking, allow the scones to cool in the pan for at least 10 minutes .
While the scones cool, make the chocolate icing, melt together some baking chocolate and coconut oil, then stir in your powdered sugar-free sweetener until smooth.
Drizzle the icing over the scones and slice into wedges.
Once slightly cooled, slice into wedges.
Store any leftovers in an airtight container in the refrigerator for up to five days or freeze for up to three weeks.
Best Sugar Substitutes For Sugar-Free Scones
My top choice is a monk fruit/erythritol blend. My personal favorite is Lakanto's brand. But you can also use Swerve, an erythritol sugar substitute.
You could also use the stevia and erythritol-based brand Pyure for most of my baked goods. However, I will add that I am not a fan of stevia-based ingredients in chocolate. I find it intensifies the aftertaste.
Would you like to save this?
If you still plan on using Pyure, you will want to use half the amount called for in this recipe since it's a much sweeter choice.
Lastly, if you can't easily find a more natural sugar substitute, you can also use Splenda or a generic brand of the same. It will work with great success.
I know not everyone would agree with me here, and I respect that, but in my book, it's still better than regular sugar.
When it comes to the keto chocolate glaze, you will have to use a confectioner's sugar substitute. Both Lakanto and Swerve have great ones to choose from.

My failed attempts when I first went keto caused me to be very intentional with my keto baking recipes, like these scones.
I threw away so many ingredients initially, and I never want anyone to be so frustrated that they give up on the diet before they can see long-lasting results.
Even though those early days were not fun, the fact that I stayed the course has made this journey very rewarding.
Besides, if I had quit at the first sign of struggle, I would not have had the opportunity to engage with you all.

Randy and I came to the keto diet looking at it from a Christian perspective. As believers, we live our lives supported by God's grace.
So when the Holy Spirit led us to combine our Christian faith and the keto diet, we did so in hopes of finding lasting transformation.
To say we needed God's intervention is to put it mildly. When we followed the Holy Spirit's prompting, we got on the path to real transformation.
Knowing firsthand the benefits of this decision, we have created a closed Christian group that is using the keto diet to transform their lives.
We invite you to join our Private Facebook Group and see if it's not the key you have been missing.
