Making brownies with coconut flour is not only doable, but it also makes sense on a number of levels.
You see, coconut flour is less inflammatory and, therefore, makes sense for anyone trying to reduce foods that cause inflammation.
As an added bonus, coconut flour brownies have fewer carbs than, say, an almond flour brownie. And if that's not enough of a reason, coconut flour is also higher in fiber and less expensive than nut flour varieties.
If you are wondering if a coconut flour brownie recipe will have too much of a coconut flavor, I've got great news for you because these brownies have such a dense chocolate flavor that it's all you taste.
This recipe uses not one, not two, but three types of chocolate for one fabulous sugar-free brownie.

Keto Coconut Flour Brownies
Although I have several delicious brownies made with almond flour, people often ask if they can be made with coconut flour.
It's a must for those who need their options to be nut-free or are simply avoiding almond flour.
However, since almond flour cannot be swapped 1:1 for coconut flour, it can be tricky to convert an existing recipe. I would hate for you to attempt to do so and fail.
I mean, isn't that why I am here? Instead, I did all the guesswork for you and created a fail-proof coconut flour brownie you can embrace.

Ingredients Needed

- Eggs, room temperature
- Unsalted butter, melted
- Sugar-free chocolate chips
- Sugar-substitute
- Baking Chocolate
- Unsweetened Cocoa Powder, Dark
- Coconut flour
- Vanilla extract
- Baking powder
- Salt
- Walnuts (optional)
How To Make These Keto Brownies
Preheat your oven to 350 degrees and prepare a 10x10 baking pan by greasing it well or lining it with parchment paper for easier removal.
Then, in a double boiler, or in the microwave using 10-second increments on a low setting, melt the butter along with the unsweetened chocolate and sugar-free chocolate chips, stirring frequently to prevent burning.
Once fully melted and smooth, stir the mixture well and allow it to cool to room temperature.
Using an electric mixer set to medium-low speed, add the eggs to the cooled chocolate mixture one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
Next, reduce the mixer speed to low and carefully add the dry ingredients: The sugar substitute, unsweetened cocoa powder, coconut flour, baking powder, and salt. Continue mixing just until the batter is smooth and fully incorporated.
If adding walnuts, fold them into the mixture at this time.
Then, pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 15 to 20 minutes, being careful not to overbake, as the brownies will continue to set as they cool.
Allow the brownies to rest in the pan for at least 20 minutes before slicing into squares. Store any leftovers in an airtight container in the refrigerator for up to five days, or wrap them well and placed in the freezer for up to three weeks.

Helpful Tips For The Best Keto Brownies
Making these low-carb brownies is simple, but a few small tips can help ensure the best texture and flavor every time.
- Melt the chocolate gently. Since the recipe begins by melting the butter with baking chocolate and sugar-free chocolate chips, it's important to do this slowly. A double boiler works best because it melts the chocolate evenly and prevents burning. If you prefer using the microwave, melt the mixture on the lowest setting using 10-second increments, stirring each time until smooth.
- Choose high-quality ingredients. The quality of your ingredients really matters in recipes like brownies. I recommend using a finely milled coconut flour with a mild flavor because it blends better into the batter and produces a smoother texture. A good coconut flour also gives more consistent baking results.
- Let the chocolate mixture cool. After melting the butter and chocolate, allow the mixture to cool before adding the eggs. If the mixture is too warm, the eggs can cook when they are added, which can lead to bits of scrambled eggs in the batter. Definitely not something you want in your brownies.
- Use a sugar substitute that bakes well. When it comes to sweeteners, choose a sugar substitute that measures like sugar and is designed for baking. Options such as monk fruit blends, erythritol-based sweeteners, or allulose blends tend to produce the best texture and sweetness in keto brownies.
These small steps help ensure your brownies bake up rich, chocolatey, and perfectly fudgy every time.

Sugar-Substitutes
As far as which sugar substitute sweeteners you can use in this recipe, I have a couple of suggestions.
My top choice is a monk fruit/erythritol blend. My personal favorite is Lakanto's brand. But you can also use Swerve, an erythritol sugar substitute.
You could also use the stevia and erythritol-based brand Pyure for most of my baked goods. However, if using Pyure, you will want to use half the amount called for in this recipe since it has double the sweetness.
However, you should know that I am not a fan of using stevia in chocolate-based recipes; in my opinion, it intensifies the aftertaste of stevia.

Coconut Flour Keto Brownies (Gluten-Free)
This delicious recipe for keto coconut flour brownies makes rich moist, sugar-free brownies everyone will enjoy.
Ingredients
- ½ cup of unsalted butter melted and allowed to cool
- 6 eggs , room temperature
- 1 cup of sugar-free chocolate chips
- 1 cup of granulated sugar-substitute
- 2 ounces of baking chocolate (roughly chopped)
- ¾ cup of dark cocoa powder
- ¼ cup of coconut flour
- 1 teaspoon of vanilla
- ¼ teaspoon of baking powder
- ¼ teaspoon of sea salt
Instructions
- Preheat your oven to 350 degrees.
- Grease a 10x10 baking pan or line it with parchment paper.
- Melt the butter and the two ounces of unsweetened chocolate, and sugar-free chocolate chips in a double boiler or in the microwave in 10-second increments at a low setting. Be sure to stir while melting.
- Stir and allow to cool to room temperature.
- To the cooled chocolate mixture add the eggs one at a time using an electric mixer set to medium-low
- Add vanilla extract and continue to stir.
- Next carefully add the sugar substitute, unsweetened cocoa powder, coconut flour, baking powder, and salt using the electric mixture set to low.
- Once the batter is well blended, pour the batter into the prepared baking pan.
- Bake for 15 to 20 minutes. Do not overbake the brownies.
- Allow the brownies to cool for at least 20 minutes before slicing them into squares.
- Store the brownies in the refrigerator for up to 5 days or wrap and freeze for up to 3 weeks.
