Keto Chocolate Chip Brownies (Gluten-Free)
When chocolate cravings are running high, these chocolate chip brownies are here to come to your rescue. Not only are these keto-friendly brownies flat-out delicious, but they are also a breeze to make.
Ingredients
- 10 tablespoons unsalted butter, plus more to grease the pan
- 1¼ cups granulated sugar substitute
- ¾ cup dark unsweetened cocoa powder
- 1 ounce (1 square) unsweetened baking chocolate, roughly chopped
- 1 teaspoon instant coffee, optional
- ¼ teaspoon sea salt
- 3 eggs, at room temperature
- 2 teaspoons pure vanilla extract
- ¾ cup almond flour, measured and sifted
- 1 teaspoon baking powder
- ½ cup sugar-free chocolate chips
Instructions
1. Preheat the oven to 325°F. Lightly grease the baking pan with butter.
2. In a medium saucepan, bring 1 cup of water to a boil over medium-high heat. Set a glass mixing bowl over the saucepan, making sure the bowl doesn’t touch the water. Add the butter, sugar substitute, unsweetened cocoa powder, unsweetened baking chocolate, instant coffee, and salt to the glass bowl. Whisk occasionally until entirely melted and combined. Allow the mixture to cool slightly and pour into a large mixing bowl.
3. Add the eggs, one at a time, to the chocolate mixture. Add the vanilla extract and mix well. Add the almond flour and baking powder, and gently stir with a rubber spatula until just combined. Fold in the chocolate chips.
4. Pour the brownie mixture into the prepared pan and bake for 20 to 25 minutes.
5. Cool the brownies for at least 30 minutes in the pan before slicing.
6. Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 weeks.
