Keto Carrot Bread
- 1 cup of finely milled almond flour
- ½ cup of coconut flour
- ½ cup of melted refined coconut oil
- 2 tablespoons of psyllium powder
- 2 tablespoons of golden flax meal
- ¾ cup of brown sugar substitute
- 1 teaspoon of vanilla extract
- 2 teaspoons of ground cinnamon
- ¼ teaspoon of nutmeg
- 1 teaspoon of ginger powder
- 2 teaspoons of baking powder
- ¼ teaspoon of sea salt
- ¾ cup of chopped walnuts
- 4 large eggs, room temperature
- ¾ cup of loosely packed freshly grated carrots
- ½ cup of coconut or almond milk
Instructions
- Preheat oven to 350 degrees
- Grease and line with parchment paper an 8x4 inch loaf pan. Leave an overhang of parchment paper, about 2 inches, to be able to lift the loaf out of the pan once fully baked.
- In a medium-sized bowl, mix the following dry ingredients: almond flour, coconut flour, salt, baking powder, psyllium powder, flax meal, and spices. Set it aside.
- Melt the coconut oil and allow it to cool.
- In a separate bowl, combine the coconut oil with the sugar substitute, and vanilla extract.
- Next, add the eggs one at a time. Mix until thoroughly combined.
- Then fold in the freshly grated carrots.
- Next, add to the wet batter the mixed dry ingredients and beat at low-medium speed until well incorporated.
- Add ½ cup of almond or coconut milk and continue to mix.
- Next, stir in the walnuts, reserving a couple of tablespoons to add to the top of the carrot loaf as garnish.
- Spread the batter into the prepared pan.
- Wet your hands and tap the entire surface of the bread to help smooth out the top of the batter.
- Next, using a finger, run it across the middle of the bread length-wise to create a small dent in the entire length of the bread. This is an optional step.
- Bake at 350 degrees for 35-40 minutes or until an inserted toothpick comes out clean.
- Allow the bread to cool fully on a wire rack before slicing it.
- Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 weeks.

Note that the carrots must be freshly grated as pre-shredded carrots will cause this bread to be dry. You will need the extra moisture that freshly grated carrots provide.
