- Pork panko )pork rind crumbs): Creates a crispy, crunchy coating without carbs or gluten
- Finely grated parmesan cheese(from a container): Adds extra flavor and helps the coating stick
- Italian seasoning (optional): Adds a familiar mozzarella stick flavor
- Garlic powder and onion powder (optional)
- Ground black pepper (optional)
- Salt
- Low-moisture part-skim mozzarella string cheese: Melts well while still holding its shape
- Eggs and water: Used for the egg wash so the coating adheres
- Olive oil spray or melted ghee: Helps the coating brown evenly in the oven
How To Make These Carnivore Cheese Sticks

Remove the mozzarella string cheese from the wrappers and slice each stick in half crosswise so you end up with 24 pieces. Arrange them on a parchment-lined baking sheet and place them in the freezer for one hour.
This step is essential to prevent the cheese from melting too quickly in the oven.
When you are ready to coat the cheese sticks, set up two medium bowls. In the first bowl, combine the pork panko, parmesan cheese, salt, and any optional seasonings you are using.
In the second bowl, whisk together the eggs and water to make the egg wash.
Working in small batches, dip each frozen cheese stick into the egg wash, then roll it in the pork crumb mixture.
Make sure the cheese is completely coated, including the ends. Repeat the process to double coat each cheese stick for extra crunch.
It is important to only coat a few cheese sticks at a time. If you work too slowly, the egg wash can freeze onto the cheese, making it harder for the coating to stick.
Once coated, place the mozzarella sticks back onto the parchment-lined baking sheet and return them to the freezer for at least 30 minutes. This second freeze helps the coating set and improves the final texture.
Preheat your oven to 375 degrees and adjust the oven racks so you can bake in the lower third of the oven.
Arrange the cheese sticks with a little space between them. Lightly spray with olive oil cooking spray or brush the tops and sides with melted ghee.
Bake for 25 to 30 minutes until golden brown and heated through. Serve warm right out of the oven for the best texture.
It's important to only do a couple of cheese sticks at a time, or the egg mixture will freeze onto the cheese and not allow the coating to adhere to the sticks.

Then, place the breaded cheese mozzarella sticks back in the freezer on the parchment-lined baking sheet for a minimum of 30 minutes.
This extra step will make sure the mozzarella sticks stay intact when baking.
Once ready to bake, preheat the oven to 375 degrees. You will be baking these in the lower third of the oven, so adjust the baking racks if needed.

Be sure that the cheese sticks are not arranged too closely. Lightly coat the sticks with olive oil cooking spray or using a pastry brush, and brush the top and sides of each mozzarella stick.
This ensures you have a crispy coating that tastes like they have been fried without excess oil.
Yup, there is no need to deal with hot oil or worry about getting the oil temperature perfect.
Bake for 25-30 minutes until golden brown and the cheese is heated through.
Store leftovers in the refrigerator in an airtight container for up to 3 days.
