Why This Recipe Works On The Carnivore Diet

The carnivore diet centers around eliminating all plant foods and relying on nutrient-dense animal products.
While traditional breads are full of wheat, grains, and carbs, this version skips them all and uses only carnivore-approved ingredients like eggs, cream cheese, cottage cheese, and pork rinds.
While I have a wide variety of delicious keto bread recipes, many of them rely on ingredients like almond flour, coconut flour, or flax meal-which don't align with the strict guidelines of a carnivore diet.
It's why I wanted to create a fully carnivore compliant bread option for those searching for it.

The following are the ingredients needed to make this recipe. Note that the full printable recipe card is at the bottom of the page.
- Eggs
The foundation of the bread, giving structure, lift, and moisture. Be sure to use room-temperature eggs for best results. - Cream Cheese
Adds richness and helps create a soft, dense texture that mimics traditional bread crumb. - Cottage Cheese
Blends into the batter for extra moisture and a protein boost. - Pork Rinds (Ground or Panko)
The secret to carnivore baking. These replace flour and add structure without any carbs or plant ingredients. - Baking Powder
Provides lift and helps the bread rise in the oven. If you choose not to include, you will end up with a denser bread but it still works. - Sea Salt
How To Make This Carnivore Cream Cheese Bread

Start by bringing your eggs, cream cheese, and cottage cheese to room temperature. This step helps everything blend smoothly without clumping.
While your ingredients are warming up, preheat the oven to 350°F and line a 10 x 5-inch loaf pan with parchment paper for easy removal later.
Using a stand mixer or electric hand mixer, beat the cream cheese and cottage cheese together until they're well combined.
Scrape the sides of the bowl a few times to make sure everything is evenly mixed. Then, beat in the eggs one at a time, continuing to scrape the bowl as you go to ensure a smooth batter.

Grind your pork rinds into a fine powder or use pork panko for convenience. Add the pork rinds, baking powder, and sea salt to the wet mixture. Mix on low speed just until everything is incorporated.
Pour the batter into the prepared loaf pan, spreading it evenly. Bake for 40-60 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let the bread cool for about 5 minutes in the pan before transferring it to a wire rack to finish cooling. Once completely cool, slice and enjoy.

Storage Tips
Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze individual slices or the whole loaf for up to 3 weeks. To reheat, simply toast or warm in a skillet with a bit of butter or tallow.
Serving Suggestions
- Use it as sandwich bread with leftover roast beef, pork, or chicken.
- Toast it and top with butter, liver pâté, or whipped bone marrow.
- Serve as a side with carnivore soups or stews.
