Carnivore Cheeseburger Soup – This ultra-creamy, low-carb soup is packed with ground beef, cheddar, and heavy cream. Perfect for keto, carnivore, and cozy nights in! Includes slow cooker + stovetop methods.
Ingredients
- 1 pound of lean ground beef
- 4 cups beef broth
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder (optional)
- 1 teaspoon of onion powder (optional)
- ¼ teaspoon of red chili flakes (optional)
- 2 cups of shredded cheddar cheese (can be substituted for Swiss cheese)
- 4 ounces of cream cheese
- ½ cup of heavy cream
Optional Toppings:
- ¼ cup of sour cream
- ¼ cup shredded cheddar cheese
- ¼ cup of chopped parsley (If ketovore)
- Crispy bacon pieces
Instructions
- In a large skillet, brown the ground beef over medium-high heat.
- Next, add the now browned beef into the slow cooker.
- Add the beef broth, dry spices, and allow to simmer on low for several hours in a crockpot or set to high for 1 hour. To make on the stovetop refer to the instructions in the notes below.
- Half an hour before serving stir in the cream cheese, heavy cream, and shredded cheddar cheese, and cook until everything melts and is fully incorporated.
- Make sure to stir occasionally to ensure that everything is well combined.
- Taste and adjust the seasoning if necessary.
- Serve in a bowl and top with any of your favorite low-carb toppings.
- Store leftovers in the refrigerator for up to three days in an airtight container. I do not recommend freezing as the soup will separate when it defrosts.
