I adore quick bread recipes for their speed and simplicity!

With just a handful of readily available ingredients, this keto strawberry quick bread is bound to become your new favorite, making it one you should include in your meal prep rotation.

I’m a huge fan of keto quick bread recipes. They make for a great morning treat, but they’re also amazing as an afternoon snack or even dessert.

I’ve made lots of different keto breads over the years, and they’ve really become a staple for our family.

I also love the combo of strawberries and lemon, which is why I added lemon extract to the bread batter and added a sugar-free lemon icing for the top of the bread!

There’s just something about the lemon flavor that pairs so well with the natural sweetness of fresh strawberries.

Are Strawberries Keto-Friendly?

The good news is that half a cup of strawberry halves contains 6 carbs and 2 grams of fiber, resulting in just 4 grams of net carbs.

This makes strawberries a suitable fresh fruit for a keto lifestyle. In a recipe like this, one cup of sliced strawberries is used throughout the entire recipe.

It’s what makes it possible to enjoy a sweet treat on a low carb diet.

To prepare the keto strawberry quick bread, start by preheating the oven to 350 degrees and greasing an 8x5x3-inch loaf pan.

Line the pan with parchment paper, leaving an overhang for easy removal. Set aside the dry ingredients: the almond flour, baking powder, and sea salt.

In a mixing bowl, use an electric mixer on high to beat the butter, cream cheese, sugar substitute, vanilla, and lemon extract together until well combined.

Gradually add the eggs, mixing well after each addition. Then, incorporate all the dry ingredients into the mixing bowl until thoroughly combined.

Gently mix in the sliced strawberries, ensuring not to overmix. Transfer the batter to the prepared loaf pan and bake for 40 to 50 minutes until the top is golden brown.

Allow the bread to cool in the pan for 15 minutes before transferring it to a baking rack to cool completely.

Combine the confectioner’s sugar substitute, heavy cream, lemon juice, lemon extract, and salt in a small bowl for the sugar-free lemon icing, mixing well until fully blended.

Leftovers can be stored in the refrigerator covered in plastic wrap or in an airtight container for up to 5 days or frozen for up to 3 weeks.

The following are my recommended sweeteners that will not raise your blood sugar and are perfect for this delicious strawberry bread.

I intentionally didn’t make this sugar-free strawberry lemon bread too sweet because the glaze adds the perfect amount of sweetness. 

When it comes to choosing your low-carb sweetener, I have several low-carb options that work well with this keto quick bread recipe.

I really like Lakanto Monk Fruit Sweetener because the texture is spot on and because there is barely any aftertaste.

This is a great one, especially if you are new to sugar substitutes because it mimics sugar the most in my book.

I’m also partial to Swerve, an erythritol blend, although you should keep in mind that it does have a bit more of a cooling aftertaste that some people dislike.

Alternatively, you could also use a stevia- and erythritol-based brand like Pyure. 

This is if you prefer to use stevia in your baked goods. If you go this route, you need to reduce the amount by half since it is twice as sweet.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.

However, when it comes to homemade icing, you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

This keto strawberry bread is loaded with flavor and makes the perfect keto breakfast bread or afternoon snack. It's a sugar-free, gluten-free strawberry bread recipe that everyone will love.

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease and line an 8x5x3 inch loaf pan with parchment paper. Leave an overhang of parchment paper to easily remove the bread from the pan by simply lifting the sides.
  3. Measure and set aside the almond flour, baking powder, and sea salt.
  4. In a mixing bowl, use an electric mixer set to high beat the butter, cream cheese, sugar substitute, vanilla, and lemon extract until well incorporated.
  5. Next, add the eggs one at a time, mixing well after each egg addition.
  6. Then, mix all the dry ingredients into the mixing bowl until well combined.
  7. Add the strawberries and mix until just blended. Note that the raspberries will break into pieces. if you decide to use frozen strawberries, they need to be sliced strawberries; there is no need to defrost.
  8. Bake in the prepared loaf pan for 40 to 50 minutes or until golden brown on top. Allow bread to cool for about 15 minutes before taking it out of the pan and allowing it to cool on a baking rack completely.
  9. Store leftovers in the refrigerator for up to 5 days or freeze them for up to 3 weeks.

Sugar-Free Lemon Icing

  1. In a small bowl, combine the confectioner's sugar substitute, heavy cream, lemon juice, lemon extract, and salt. Mix well until fully incorporated. Add another tablespoon of heavy cream to thin the icing if necessary.
