- ¾ cup granulated sugar substitute (must be an erythritol blend)
- ¼ cup of egg white powder
- ½ teaspoon cream of tartar
- ⅛ teaspoon sea salt
- ½ teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F. Line two baking sheets with parchment paper and set it aside.
2. In a large bowl, using an electric mixer on low-medium, combine the egg white powder, granulated sugar-substitute, cream of tartar, and salt until well combined.
3. Next, add the water and vanilla extract to the mixture and beat on high speed for about 5-6 minutes, stopping and scraping the bowl once or twice, as needed. The meringue will be ready once it is glossy and stiff.
5. In small batches scoop the prepared meringue into a piping bag fitted with a French star tip, and pipe 1-inch diameter kisses onto a parchment-lined baking sheet. Alternatively, you can spoon the meringue onto the sheet for a more organic shape.
6. Bake for 15 to 20 minutes You’ll know they’re ready when the outside is dry, and the meringue feels light and airy.
