Keto Breakfast Cookies

Are you always rushing out of the house to get your kids to school and get to work on time with only a cup of coffee in your hand? These keto breakfast cookies are the perfect grab-and-go meal during those busy mornings.

These low-carb breakfast cookies fulfill your childhood dream of eating cookies for breakfast healthily.

They are especially a great treat for anyone on a keto diet, but it’s a cookie recipe the whole family will enjoy.

These cookies have a similar texture and flavor to oatmeal cookies but without the use of rolled oats that are too high in carbs to be part of a ketogenic diet.

They get their oatmeal-like flavor and texture from the addition of golden flax meal and slivered almonds. It’s a winning combination.

To make these keto-friendly breakfast cookies, begin by preheating the oven to 350 degrees.

Then measure the almond flour and golden flax and set aside.

In a medium-sized bowl, using an electric mixer, combine the softened butter, peanut butter or almond butter, sugar substitute, and vanilla extract. Mix until light and fluffy.

To this mixture, add the two eggs one at a time and combine until well incorporated.

Next, add the sifted almond flour, golden flax meal, coconut flakes, slivered almonds, sugar-free chocolate chips, baking powder, salt, and cinnamon powder, and mix until just combined.

Using a small cookie scoop, place the dough on a lightly greased baking sheet or parchment paper lined sheet.

Slightly flatten the cookies with your fingers or the back of a spoon.

Bake the cookies in the oven until lightly brown around the edges, about 12-15 minutes.

Store leftovers in an airtight container and refrigerate them for up to 5 days or freeze them for up to 3 weeks.

Best Sugar-Free Sweetener Options

As far as which sugar substitute to use for these sugar-free breakfast cookies, I have a few recommendations. If you are a regular on our site, you know I’m a huge fan of Lakanto Monk Fruit.

This is because the texture of Lakanto is spot on since there is barely any aftertaste. It is a monk fruit and erythritol blend.

If you have not given this all-natural sweetener a try, you have no idea what you are missing.

I love that Lakanto Monk Fruit is all-natural and gets its sweetness from antioxidants called mogrosides instead of fructose or sucrose. And it has zero calories and zero glycemic impact.

You can also use their brown sugar substitute, which works beautifully for this recipe.

That being said, I’m also partial to Swerve, another erythritol blend.

It works well in this keto-friendly breakfast cookie recipe and is an excellent choice if you are looking for a sugar substitute that has no bitter aftertaste and measures just like sugar.

Swerve is made from ingredients found in select fruits and starchy root vegetables and contains no artificial ingredients, preservatives, or flavors. Like Lankanto, Swerve has a 0 % impact on blood sugar.

Swerve also has a brown sugar option that is quite nice and that I can also recommend for these cookies too.

I know some of you are stevia fans; if that’s you, you can use the stevia and erythritol-based brand Pyure in this recipe.

However, it’s important to note that if you are using Pyure, you will want to use half the amount called for in this recipe since it’s a much sweeter option.

Join Our Jesus And Keto Movement

Our family came to the keto diet looking at it from a Christian perspective. As believers, we live our entire lives supported by God’s grace.

So when the Holy Spirit led us to combine our Christian faith and the keto diet, we did so in hopes of finding lasting transformation.

To say we needed God’s intervention is putting it mildly. When we followed the Holy Spirit’s prompting, we got on the path to fundamental transformation.

Knowing firsthand the benefits of this decision, we have created a closed Christian group that is using the keto diet to transform their lives.

I love how supportive and encouraging this group of believers is. It’s exciting to see how people are transforming their lives by combining this lifestyle with the Christian faith.

We invite you to join our Private Facebook Group and see if it’s not the key you have been missing.

It's essential to only use golden flax meal, as regular flax meal will produce a gummy cookie
