You can use either heavy cream or full-fat unsweetened canned coconut milk in these cupcakes.

Ingredients
- 4 ounce of cream cheese softened
- ¼ cup of unsalted butter softened
- 4 large eggs, room temperature
- ½ cup of granulated sugar substitute
- 1 ¼ cups of finely ground almond flour , measured and sifted
- 1 ½ teaspoons of baking powder
- ¼ cup of heavy cream or unsweetened canned coconut milk, stirred well
- 1 ½ teaspoons of vanilla extract
- ¼ teaspoon of salt

- 4 ounces full-fat cream cheese, softened
- ¼ cup unsalted butter, softened
- ¾ cup confectioners’ sugar substitute
- ½ teaspoon vanilla extract
- 3 to 4 tablespoons heavy whipping cream

8. Divide the batter evenly among the 12 prepared cupcake liners. Each liner should be approximately three-quarters full.
9. Bake the cupcakes at 400 degrees for 5 minutes. Without opening the oven or removing the cupcakes, reduce the temperature to 350 degrees.
10. Continue baking for another 15 to 20 minutes, or until the cupcake tops are lightly golden and a toothpick inserted into the center comes out clean.
11. Allow the cupcakes to cool in the pan for about 10 minutes. Transfer them to a cooling rack and allow them to cool completely before frosting, at least 30 minutes.
Sugar-Free Vanilla Cream Cheese Frosting
1. In a large mixing bowl, beat the softened cream cheese and butter with an electric mixer until smooth, creamy, and fluffy.
2. Reduce the mixer speed to low and gradually add the confectioners’ sugar substitute. Once incorporated, increase the speed and beat until the frosting is smooth.
3. Add the vanilla extract.
4. Add the heavy whipping cream one tablespoon at a time, mixing after each addition. Stop adding cream once the frosting is thick, smooth, and easy to spread. The frosting should be soft enough to coat the cupcakes but firm enough to remain in place when the cupcakes are turned upside down.
5. If the frosting becomes too soft, refrigerate it for 10 to 15 minutes before decorating the cupcakes.
How To Frost and Coat the Cupcakes With Coconut
1. Pour the unsweetened shredded coconut into a wide, shallow bowl. Break apart any clumps with your fingers so the coconut forms an even layer.

7. Lift the cupcake straight out of the bowl and turn it upright. Use clean fingers or a small spoon to gently press additional coconut onto any bare areas.
8. Repeat the frosting and dipping process with the remaining cupcakes. For the best coverage, frost and dip each cupcake before moving on to the next one. The coconut adheres best while the frosting is freshly spread.
9. Refrigerate the finished cupcakes for about 20 minutes to allow the frosting to firm before serving.

- If you decide to use coconut milk, be sure to use full-fat canned coconut milk, not refrigerated coconut milk beverage. Stir the canned coconut milk thoroughly before measuring.
