These Carnivore French Toast Sticks are made with a carnivore bread base of eggs, cream cheese, cottage cheese, and pork rinds, they’re pan-fried to golden perfection after a quick dip in an egg mixture. Perfect for a carnivore or keto-friendly breakfast, snack, or meal prep option. Serve plain or topped with melted butter, whipped cream, or keto-approved syrup for extra indulgence.
Ingredients
- 8 large eggs, room temperature
- 8 ounces of full-fat cream cheese (room temperature)
- 1 cup of cottage cheese
- 1 ½ cups of ground pork rinds
- ¼ cup of glycine powder or allulose (optional)
- 1 teaspoon of baking powder
- 1 teaspoon of sea salt
French Toast Soak
- 2 eggs, room temperature
- 2 tablespoons of heavy cream
- ¼ teaspoon of vanilla extract (optional)
- 1 tablespoon of glycine powder or allulose (optional)
Instructions
- Allow your eggs, cream cheese, to come to room temperature.
- Preheat your oven to 350 degrees.
- Grease and line a 10 x 5-inch loaf pan with parchment.
- Finely grind your pork rinds into a fine powder or use pre-made pork panko.
- In a large bowl, using an electric mixer, or a standup mixer, beat together the room-temperature cream cheese and cottage cheese, sweetener if adding, until well combined. Be sure to scrape the sides of the bowl several times to ensure the mixture is well blended.
- Next, add the eggs one at a time, making sure to scrape the sides of the bowl several times.
- To the wet ingredients, slowly add all the pork rinds, baking powder and salt on a low mixing setting.
- Pour the bread batter into the pan,
- Bake the carnivore bread for 40-60 minutes until lightly brown on the top and when an inserted toothpick comes out clean.
- Let the bread cool completely before slicing.
- Once the bread is cool, slice it into thick slices (about ¾ to 1 inch thick), then cut each slice into sticks.
- In a shallow bowl, whisk together the eggs, heavy cream, sweetener if adding, vanilla extract (if desired).
- Lightly dip each stick into the egg mixture, letting excess drip off.
- Heat a skillet over medium heat and add butter, ghee, or tallow.
- Pan-fry the sticks until golden brown on all sides, about 2–3 minutes per side.
- Serve warm, with melted butter, whipped cream, or a keto-friendly allulose topping if you're not strict carnivore.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
