How To Make This Creamy Carnivore Chicken Soup (Stovetop Method)

In a stockpot or 6-quart Dutch oven, melt the butter over medium heat. Add the sliced chicken, salt, pepper, optional spices, and chicken broth. Bring the mixture to a boil.
Once boiling, reduce the heat to medium-low and let it simmer uncovered for about 45 minutes, or until the chicken is fully cooked and tender.
Remove the chicken pieces with a slotted spoon and transfer them to a bowl. Using two forks, shred the chicken. Return the shredded chicken back into the pot.
Raise the heat to medium and stir in the heavy cream and softened cream cheese cubes. Stir continuously with a wooden spoon until the cream cheese fully melts and blends into the broth, creating a creamy base.

There is no need to remove and shred the chicken when using a crockpot. The chicken will naturally fall apart as it cooks.

This carnivore creamy chicken soup is rich, cheesy, and packed with protein, making it the perfect low-carb comfort food. Made with tender shredded chicken, cream cheese, heavy cream, and melted cheddar.Whether you make it on the stovetop or in the crockpot, this carnivore chicken soup is a simple, family-friendly meal that keeps you full and on track with your goals.
Ingredients
- 2 tablespoons of unsalted butter
- 2 ¼ pounds of boneless raw chicken breasts (about 3) cut into 2-inch pieces
- 32 ounces of chicken broth
- 1 ½ teaspoons of salt
- 1 teaspoon of black pepper
- 1 teaspoon onion powder (optional)
- ½ teaspoon of garlic powder (optional)
- 8 ounces of full-fat cream cheese, cut into small cubes
- ¾ cup of heavy cream
- 2 cups of shredded cheddar cheese
Instructions
- In a stockpot or 6-quart Dutch oven, melt the butter and add the sliced chicken, dry spices, herbs if adding, and chicken broth to the pot. Bring to a boil and then reduce heat to a medium-low simmer uncovered for about 45 minutes until the chicken is fully cooked.
- Once the chicken is cooked remove the chicken pieces using a slotted spoon and transfer them to a bowl. Using two forks shred the chicken and then return to the pot.
- Raise the temperature to medium heat and stir in the heavy cream and the softened cream cheese cubes into the pot. Stir using a wooden spoon until it melts completely into the creamy chicken soup.
- Add the shredded cheese and stir until fully incorporated.
- Serve the carnivore soup hot.
- Store the leftovers in the refrigerator for up to 3 days. I do not recommend freezing as it may separate once it thaws.

- To cook in a crockpot add the chopped raw chicken breasts, chicken broth, heavy cream, spices, into a slow cooker.
- Cook on high for 3 hours or low for 5-6 hours until the chicken has fully cooked. Then add the softened cream cheese and the shredded cheddar cheese and give it a good stir until the cheeses have fully melted and incorporated into the soup.
- When making in a crockpot there is no need to remove the chicken and shred it. The chicken will fall apart naturally as it cooks.
