My favorite reason for sharing my keto scones is that they’re super easy to make because they do not require you to roll out the dough.

This makes it a much healthier option than traditional sugar-laden scones.

Because these keto-friendly blueberry scones are sugar-free, gluten-free, and grain-free, they are also diabetic-friendly.

Whether you want to take advantage of fresh blueberries in season or need to use frozen ones, this keto scone recipe makes a great sweet treat.

Typically, scones have a biscuit-like dough that is lightly sweetened, with the majority of recipes calling for rolling and then cutting the dough prior to baking.

But this girl is all about making keto baking easier. If I can shave off some time from a recipe, you better believe I will. 

Plus, if there is something I’ve noticed, it is that many who come to the keto diet don’t have years of baking skills under their belt. So, keeping things simple just makes sense.

I added a keto lemon glaze to the top of these low-carb blueberry scones because, well, everyone knows that the flavors of lemon and blueberries are meant to go together.

If this is news to you, trust me on this, because these two flavors are best friends.

The glaze is not a must, and leaving it out will reduce the scones by another carb, but frankly, I think it elevates these keto-friendly blueberry scones, so try adding the glaze at least once.

Since these keto scones have 4.4 net carbs, they can, therefore, easily fit into your daily macros as a keto treat.

The Simple Ingredients Needed To Make Keto Lemon Blueberry Scones

If you’re wondering how to make keto scones, I’m going to share how I make keto-friendly blueberry scones easily.

I bake my keto blueberry scones in a 9-inch cast-iron skillet.

Using a cast-iron skillet plays an important role because it allows for excellent even browning. Although you could bake these in a baking pan, I can’t vouch for it since I have only used a cast-iron skillet.

I truly believe it helps give the scones that biscuit quality.

To make these blueberry keto scones, start by preheating the oven to 375 degrees and greasing a 9-inch cast-iron skillet with butter.

Melt the butter and let it cool.

Then, using an electric mixer, combine the sugar substitute, melted butter, lemon zest, and eggs.

Mix in the sour cream, and then add the dry ingredients (almond flour, coconut flour, baking powder, and sea salt) to the wet ingredients until well combined.

Finally, fold in the fresh or frozen blueberries.

Spread the batter into the greased skillet and bake for 25–30 minutes until golden brown.

Then, in a separate bowl, mix the confectioner’s sugar substitute with lemon juice and lemon extract for the keto lemon glaze.

Use a sharp knife when cutting the scones for the best results.

Add heavy whipping cream to thin the glaze, and drizzle it over the cooled scones. Store any leftovers in the refrigerator in an airtight container for up to five days or freeze for up to three weeks.

I use either fresh or frozen blueberries when making these blueberry scones. If using frozen berries, add them to the mix without defrosting.

There is no need to defrost your blueberries before baking. Can I hear an amen for time-saving tips?

The Flours Needed For Low Carb Scones

These keto-friendly scones use a combination of almond and coconut flour. I use both because each of these flours helps me get the texture of my low-carb blueberry scones as close as possible to real scones.

Best Sugar-Substitute Choices When Making Blueberry Keto Scones

When it comes to sugar substitutes, you have a few choices when making keto-friendly scones. 

I really like Lakanto Granulated Monk Fruit Sweetener, because the texture mimics sugar so well and because there is barely any aftertaste.  It’s the one sweetener that never gives me an issue.

I’m also partial to Swerve’s granulated sweetener. It’s an erythritol blend. However, it does have a cooling aftertaste in larger quantities that some people may dislike. The cooling aftertaste is not an issue since you will only be using a small amount in this recipe.

You could also use the stevia- and erythritol-based brand Pyure. However, you may want to use less since it tends to be sweeter. 1/4 cup will do the trick in this recipe.

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda for baking or a generic brand of the same. It will work with great success.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar.

However, when it comes to the keto lemon glaze you will have to use a confectioner’s sugar substitute. Both Lakanto and Swerve have great ones.

Are Berries Allowed On A Keto Diet?

In case you’re wondering if you can have berries on a keto diet, the answer is yes, as long as you keep the portion low. On a ketogenic diet, we don’t eat a lot of fruit.

Too much fructose can cause an even higher insulin response in our bodies than regular sugar. With that in mind, on a keto diet, the fruit we indulge in from time to time comes in the form of berries.  

Why? They are much lower in sugar and deliver a lot of flavor and nutrition.

This recipe for keto blueberry scones keeps you compliant because it only uses a small number of blueberries.

I added one cup of blueberries to this recipe, but you can reduce that to half a cup and, therefore, have an even lower carbs option.

This is why a recipe like my keto blueberry scones makes for a perfect keto snack.

It allows you to enjoy a nice treat without having to worry about having too many carbs. Eating a low-carb keto diet will certainly help in quieting your need for sweets.

  1. Preheat the oven to 375 degrees.
  2. Grease with butter a 9-inch cast-iron skillet.
  3. Melt the butter and set it aside to cool. 
  4. Using an electric mixer, combine the sugar substitute, melted butter, lemon zest, and eggs.
  5. Add the sour cream and combine well.
  6. Next, add the dry ingredients (almond flour, coconut flour, baking powder, and sea salt) and stir until fully combined.
  7. Lastly, fold in the fresh or frozen blueberries. Note that if using frozen blueberries, there is no need to defrost.
  8. Spread the batter into a fully greased 9-inch cast-iron skillet. If you do not own a cast-iron skillet, grease a round 9-inch cake pan.
  9. Bake for 25-30 minutes or until an inserted toothpick comes out clean.

Keto Lemon Glaze

  1. Combine the confectioner's sugar substitute with the 2 tablespoons of lemon juice and l1/2 teaspoon of lemon extract.
  2. Then, add 1 to 2 tablespoons of heavy whipping cream to thin the glaze. Start with 1 tablespoon of cream and add more if needed.
  3. Drizzle the top of the thoroughly cooled keto blueberry scones and allow the glaze to set before eating.
  4. Store leftovers in the refrigerator for up to five days or freeze for up to three weeks.
