Keto Triple Chocolate Cookies

These keto triple chocolate cookies have to be the chocolatiest cookies I’ve ever made. They are rich, soft, fudgy, and slightly chewy.

Truly, these were created for a true chocolate lover enthusiast. It’s a must-have cookie recipe for anyone doing the keto diet looking for a way to satisfy a chocolate craving dead in its tracks. 

Trust me when I tell you that this low-carb chocolate cookie is one that the entire family will beg you to make, even if they are not on a ketogenic diet.

Made with cocoa powder, baking chocolate, and sugar-free chocolate chips, this cookie recipe will make a believer in keto out of anyone.

Look, I could have easily stopped with only two forms of chocolate for this keto cookie, but why if we can have a triple effect of chocolate goodness?

The making of these triple chocolate cookies will require that you melt baking chocolate, sugar-free chocolate chips, and butter. I do so gently over a double boiler. But once that step is done, it’s smooth sailing.

Then, in a separate bowl, I combine the cocoa powder, almond flour, coconut flour, baking powder, a dash of salt, and a little instant coffee powder.

The coffee is added to enhance the flavor of chocolate, but feel free to leave it out if you are making this for the kiddos.

Once the chocolate and butter mixer has cooled, then comes the addition of eggs and the sugar substitute.

At this point, it’s just a matter of combining the wet and dry ingredients and folding them in the sugar-free chocolate chips. 

Probably the most challenging part of this keto triple chocolate cookie is having to wait for the cookie dough to chill for a minimum of 30 minutes. 

This keto cookie recipe is basically a chocolate crinkle cookie recipe.

Meaning it’s crispy on the outside and moist and rich on the inside.

You can roll them prior to baking in sugar-free confectioner’s sugar for another festive variation.

How To Make Keto Triple Chocolate Cookies

When it came time to pick the brands I wanted for the baking chocolate, I went with the classic easy-to-find Baker’s brand.

Why? Because it’s consistently good. There is no need to go for the premium price tag when this brand works perfectly. 

As far as choosing which cocoa powder to use, here again, I went for my go-to brand, Hershey’s Special Dark Cocoa.   You can, however, use Ghirardelli Unsweetened Cocoa with similar results.

Since I wanted these cookies to have a deep chocolate flavor, I opted for a dark process cocoa but you can use regular cocoa if you prefer.

As far as what sugar-free chocolate chips to use, I always go for Lily’s stevia-sweetened chocolate. Hands down, it’s my favorite sugar-free chocolate chip choice. But you can also use Hershey’s sugar-free chocolate chips

Keto Chocolate Crinkle Cookies

If what you want is a more traditional crinkle cookie, you can get that classic crackle effect by rolling a ball of cookie dough into a small bowl of confectioners’ sugar substitute.

Once the cookies are coated with the confectioner’s sugar substitute, you’ll bake them for about 13 minutes, being sure not to overbake.

The Tools You’ll Need

Sugar Substitute Options

When it comes to choosing which sugar substitute to use for these chocolate cookies, I have several options for you.

As I listed earlier, my go-to choice is Lakanto Monk Fruit because the texture and flavor are what I have found to be the closest to real sugar and because there is barely any aftertaste. 

Having said that, I’m also partial to the brand Swerve, which is an erythritol blend. Similar to Lakanto it uses sugar alcohols and has a 0 % impact on blood sugar.

Personally, I don’t like using stevia because I am sensitive to the aftertaste and in chocolate recipes, the bitterness can be magnified. The exception is Lily’s chocolate, that is stevia-based and yet has zero bitterness. I truly have no idea how they do it. 

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success. 

For the crinkle effect, I recommend you use Lakanto confectioner’s sugar substitute or Swerve’s confectioner’s sugar sub.

Magnesium In Chocolate

Did you know that there is evidence that we can benefit from enjoying dark chocolate in our diet? That’s because it actually contains a nice amount of magnesium, an essential mineral our bodies need to function properly.

Coming in at 176 mg in a 100 g serving, it’s a great way to add a little more magnesium to our diet. It sounds to me like yet another great excuse to enjoy these low-carb chocolate cookies.

In addition to magnesium,  dark chocolate contains a specific group of antioxidants called flavonoids.

Flavonoids are great for our hearts by lowering LDL cholesterol, increasing blood flow, and lessening the threat of blood clots.

Keto Triple Chocolate Cookies

These Keto Triple Chocolate Cookies are the perfect low carb treat when you are craving a dark rich chocolate cookie. They are decadent chocolate cookies that also happen to be grain-free, gluten-free, sugar-free and keto-friendly.

Instructions

  1. Using a double boiler, melt the 4 ounces baking chocolate, 1/2 cup of sugar-free chocolate chips, and unsalted butter. Stir with a spatula until fully combined.
  2. In a separate bowl using a whisk combine the 1/3 cup unsweetened cocoa powder, almond flour, coconut flour, baking powder, sea salt, and instant coffee and set aside.
  3. To the cooled chocolate and butter mixture whisk in the 4 eggs one at a time beating between each addition.
  4. Next add the vanilla, sugar substitute and combine well.
  5. To this wet batter add the dry ingredients. Using a spatula to stir until just combined.
  6. Then fold into the batter the remaining 3/4 cup of sugar-free chocolate chips until combined.
  7. Allow the cookie dough to chill in the refrigerator for at least ½ hour.
  8. Preheat the oven to 325 degrees while the dough chills and line your cookie sheet with parchment paper or lightly grease your baking sheet.
  9. Once the dough has had time to chill, using a tablespoon or small cookie scoop add the dough onto the prepared cookie sheets and bake for about 13 minutes. Note: Don’t overbake this cookie to make sure it has the right consistency of chewy inside and crispy outside.
  10. If what you are wanting is a more traditional crinkle cookie, you can get that classic crinkle effect by rolling a ball of the cookie dough into a small bowl of confectioners' sugar substitute. 
  11. Once the cookies are coated with the confectioner's sugar sub, you'll bake them for about 13 minutes.
  1. Allow the cookies to fully cool before eating. Note that the cookies will be fragile until they are allowed to cool completely.
  2. Store any leftovers in the refrigerator for up to 5 days or freeze for up to 3 weeks.
