Here in South Florida we are already in full summer mode. Which simply means finding creative ways to stay cool, is always welcomed.

Don’t ask me why this was my first attempt at making popsicles. Frankly, I’m a bit embarrassed that I waited so long, because it took no effort to make these keto-friendly popsicles.

I finally buckled down and created a recipe after the sweltering weather we were experiencing made it clear that summer had arrived in full force.

Why Ketosis Is A Good Thing

Hear me out before you say no to a popsicle as a meal option.

You see being in ketosis has reduced my appetite immensely causing me to intermittent fast easily. This means I rarely eat three meals a day. Most days I have one main meal with maybe a snack or two in between.

This is because being in a state of therapeutic ketosis has many great benefits, one of which includes burning fat as your primary fuel instead of sugar.

Ketosis is the metabolic process of using fat, instead of carbohydrates as the primary source of energy. Simply put, when you are in a state of ketosis your body is directly breaking down its fat stores as energy.

When Does Ketosis Happen?

You enter ketosis when your body doesn’t have enough carbs (glucose) available and turns to fat instead.

When you reduce your carbs and deplete the glucose and glycogen stores, it forces the body to search for an alternative fuel.

This causes your body to break down it’s stored fat for energy in a process called beta-oxidation. Which turns into acetoacetate. Acetoacetate then shifts to beta-hydroxybutyrate, (ketone bodies) These ketones then travel in your blood and provide energy to the body and brain.

One of the interesting reasons why ketosis is effective in weight loss, is because it helps in the regulation of the hormones that are directly responsible for our weight.

This is why people notice that their cravings are greatly reduced when the do a low carb keto diet.  Being in ketosis causes their appetite to be  suppressed.

Ketosis Appetite Suppression  Benefits

During the summer months I find that my appetite is further reduced. I don’t know if there is a scientific reason for this, or if I am just trying to find a way to avoid turning on my stove in the summer. Ha!

But all kidding aside, appetite suppression is something I’ve noticed ever since Randy and I went low carb keto.

Let me go back to the reason I believe these popsicles can sub in as a meal.

I mainly feel this way because the recipe uses heavy whipping cream, cream cheese and berries, and I don’t know but that kinda sounds like a shake to me. So what if it’s a “frozen shake”?

I mean, who’s making the rules as to what time we should eat something anyway?

You know who I am certain will agree with my keto popsicles for breakfast idea? Yup, you guessed it, the children in your life.

I tell you what, if I would have given my kids the option to have a keto popsicle recipe like this for breakfast, waking up and getting ready for school would have required no convincing.

Making Healthy Keto Popsicles

I’ve given you plenty of reasons why you should consider making healthy keto popsicles.

So, what are you waiting for? Get yourself some popsicle molds and start packing your freezer with keto frozen treats.

I make my keto popsicle recipe in a high-speed blender  and process the ingredients until smooth. Once perfectly blended you can spoon the mixture into your popsicle molds.

Since this was my first time introducing you to one of my keto popsicle recipes, I took extra measures to impress you.

Which is why I strategically added some sliced strawberries and blueberries to the bottom of my popsicle molds before adding the mixture.

I then used a skewer to push the blended puree to make sure there were no air pockets in the mold, and that the mold was full to the brim.

Alternatively, you can skip the extra fruit in the bottom of the mold if you are pressed for time, and just add all the fruit into your blender.

These keto berries and cream popsicles will be ready to enjoy once they are completely frozen and firm. This can take anywhere from 3-4 hours.

Can I tell you that the waiting till they are completely frozen, is probably the only challenge you’ll find in making these keto berries and cream popsicles?

It’s soooo hard to wait for them to be ready.

BUT for goodness sakes, don’t keep opening the freezer to check on them. That’s only going to make it longer before you can enjoy your keto berry and cream popsicles.

Unmolding And Serving Your Popsicle Treats

When the allotted time has finally passed, and your are ready to unmold your popsicles,  simply run some warm water over the bottom of the popsicle molds and wiggle them out gently. It’s really that easy!

These frozen treats will keep in the freezer for weeks in their molds. Making it easy to  meal plan .

My healthy keto popsicles recipe makes 12 regular-sized popsicles, but you can always cut the recipe in half if you don’t have enough molds.

But trust me, you’re going to want to get enough molds.

I presented mine to my family on a metal tray lined with ice cubes and caused a dramatic entrance. Taking this tray to the table made everyone sit up and take notice.

Can you imagine taking this popsicle lined tray to your guests when hosting a BBQ? I can’t imagine anyone turning them down.

I picked up my metal tray at Target in their dollar section. I mean, how cool is that? Am I the only one who loves this section of Target? Who am I kidding, I love every section of this store.

Their dollar section is always full of great seasonal items, allowing me to decorate for each season easily and inexpensively.

Ingredients

  • 8 ounces of cream cheese softened
  • 2 cups of heavy whipping cream
  • 1 tablespoon of lemon juice
  • 1/4 cup of sour cream
  • 1 1/2 cups of fresh sliced strawberries (reserve 1/2 cup to layer the bottom of the popsicle mold)
  • 1 cup of fresh blueberries (reserve 1/2 cup to layer the bottom of the popsicle mold)
  • 3/4 cup of sugar substitute

Instructions

  1. Add the cream cheese, heavy cream, lemon juice, and sour cream into a high-powered blender or food processor. Process until smooth.
  2. Add the 1 cup of the strawberries, and 1/2 cup of blueberries, sugar substitute.
  3. Blend until fully combined and smooth.
  4. Pour the mixture into the popsicle molds and slide the popsicle sticks.
  5. Freeze at least 3 to 4 hours until frozen solid.
  6. Unmold when ready to serve by running the bottom of the popsicle molds under warm tap water. Jiggle the popsicle stick gently to help release from mold.
