I’ve been a fan of chili for years, and my friends and family can vouch for this.

I have a few good reasons why this is the case. For starters, I love the flavors of a good, bold chili.

Then there is the fact that chili basically cooks itself, especially when made in a slow cooker.

Tossing all the ingredients into a large slow cooker and seeing it transform into a meal a few hours later is simply a work of art in this girl’s book.

Just set everything in the slow cooker in the morning and let it cook all day long. You’ll come home to a delicious and hearty chili that’s perfect for a winter night.

Don’t get me wrong, there are plenty of delicious keto recipes out there, but too often, they are complicated and, therefore, not practical for a busy weeknight.

I completely hear you. Why should we trade convenience for flavor? Personally, I think we can and should have both.

One of my easy keto meals is this keto shredded chicken chili. Because it’s fuss-free, it makes it into our keto meal prep rotation frequently.

In fact, you can even swap the raw chicken for leftover rotisserie chicken for even more convenience. 

You should know that there is nothing bland about this or any of my easy keto chili recipes.

Family Chili Made Keto Friendly

When our family went keto, my traditional chili recipe needed a low-carb diet makeover too. 

I converted our family’s favorite into a keto chili by simply removing the beans. Therefore, removing them from the recipe was the easiest way to convert it into a keto chili recipe.

Beans are delicious and all, but they are still quite high in carbs. If your goal is to keep your carbohydrates low in order to enter into ketosis quickly, you need to keep a close eye on this macronutrient.

At first, my own family wasn’t too sure about a beanless chili recipe. I can’t say I blamed them for being skeptical because I too, had my reservations.

Thankfully, we quickly learned that removing the beans from our family’s favorite did not interfere with the flavor.

My decision to take out the high-carb beans made it a viable keto option.

I hope this inspires you to examine your own family favorites to see how you could tweak them to become a low-carb, keto-friendly option.

Keto Chicken Chili For Meal Prep

Not only is this keto chicken chili a great recipe, but I purposely made it a big batch recipe, allowing for leftovers automatically.

If a big batch of chili is not what you need, you can split the recipe in half easily.

What’s more, if you have a large crock pot, you can make a double batch of the recipe for when you need to feed a large crowd.

As an added bonus, this recipe also freezes well. So it’s not like you will have to eat the same meal back-to-back.

It’s so nice to know that I can serve a healthy, satisfying keto meal to my family without stressing about what to make for dinner.

The Secret To Creamy Keto Chicken Chili

Although this isn’t a white keto chicken chili recipe, it does have one little gem of an ingredient that makes it super luscious and creamy.

It may seem like an odd addition, but I add some cream cheese to my chicken chili recipe. Doing so takes it to a whole other level.

The use of a little cream cheese once the chicken chili is cooked adds a creaminess to the chili that really sets it apart from other recipes.

It’s amazing to me how just 6 ounces of cream cheese in a large pot of chili can make such a big difference, but trust me, it does.

  • Shredded cheddar cheese, Monterey Jack cheese, or pepper Jack cheese
  • Sour cream
  • Raw jalapeños or pickled jalapeños
  • Green onions
  • Fresh cilantro

How To Make Keto Chicken Chili In A Crock Pot

Begin by slicing your choice of chicken into 1/2-inch strips; this will help the chicken shred more easily. Note that you can use boneless, skinless chicken breasts, chicken thighs, or even rotisserie chicken for this recipe.

Just keep in mind that the chili will be ready in half the time if you use precooked chicken.

Place the slices of chicken into the How To Cook Chicken Chili On A Stovetop

This recipe can also be made in a 6-quart pan or Dutch oven rather than a slow cooker. To do so, sauté the slices of chicken with a couple of tablespoons of olive oil or vegetable oil, along with the onions and garlic.

Then add the rest of the ingredients, minus the cream cheese, to the pot and allow the chicken chili to simmer at medium heat for about 30 minutes, or until the chicken is opaque and shreds easily when stirred.

Once the chicken is fully cooked, you’ll add the cream cheese and stir until melted and well combined.

Easy Keto Chicken Chili Tips

The following are some tips to ensure your chicken keto chili turns out perfectly.

  • Slice your raw chicken into 1/2-inch strips before adding it to the slow cooker. It’s probably what will take the most time, but it’s necessary to make sure the chicken breaks down easily.
  • Add the cream cheese right at the end of the cooking time, making sure to stir well till it fully incorporates into the chili.
  • Set your slow cooker to the warm setting once the cream cheese has been added. It will then stay ready for you to serve at your convenience.

This easy keto chicken chili recipe can be made in a slow cooker or on the stovetop. It's a creamy low carb chicken chili that is rich, hearty, and flat-out delicious.

Ingredients

Chicken Chili Toppings (Optional)

  • 1 cup of shredded cheddar cheese
  • 1/2 cup of sour cream
  • 1/4 cup of raw jalapeños or pickled jalapeños
  • 2 tablespoons of green onion

Instructions

Slow Cooker Instructions

  1. Slice the boneless chicken into 1/2 inch strips.
  2. Place the slices of chicken into a 7-quart slow cooker. Then add to the pot the garlic cloves, chopped onion, canned crushed tomatoes, water, and dry spices. Give the pot a good stir to combine all the ingredients.
  3. Cover and cook the chicken chili on the low setting for about 6 hours or on high for 3.5 hours.
  4. Once the chicken is cooked and shreds easily when stirred, you'll add the 6 ounces of cream cheese to the pot.
  5. Stir the chili well making sure the chicken is fully shredded and the cream cheese is well incorporated.
  6. Then set the slow cooker to the warm setting until ready to serve.
  7. Optional: Top your keto chicken chili with shredded cheddar cheese, sour cream, green onions, and jalapenos.
  8. Store leftovers in the refrigerator for up to 2 days or freezer for up to 2 months.


Leftover Rotisserie Chicken Instructions

  1. You can swap out the raw chicken for leftover shredded rotisserie chicken. Just keep in mind that the chili will be ready in half the time.

Notes

Stovetop Option This recipe can be made in a 6-quart pan rather than a slow cooker. To do so, saute the slices of chicken in a large pot along with the onions and garlic. Then add the rest of the ingredients minus the cream cheese to the pot and allow the chicken chili to simmer on a low boil for about 30 minutes or until the chicken is opaque and shreds easily when stirred. Once the chicken is cooked, add the cream cheese and stir until melted and well combined.

Using Leftover Rotisserie Chicken


You can use a whole small rotisserie chicken in place of the raw chicken in this recipe. Just keep in mind that the chili will be ready in half the time if using precooked chicken.

For Ground Chicken Or Ground Turkey, use ground chicken or turkey using 1 1/2 pounds and brown the meat before adding it to the crock pot. It can also be made on the stovetop; look for the instructions above.

This recipe can be halved easily and then made in a 4-quart slow cooker.

I really enjoyed this as the cool weather is moving in. I made a couple of modifications as I was using leftover Costco rotisserie chicken, which added a bit of saltiness, so I didn't add any extra salt. I added a Tbs of lemon juice and a quarter cup of pickled jalapeno juice as a flavor enhancer and this calmed down the excess saltiness. I figured my servings at 2 cups per serving, with five servings. Came out to 443 cals, 27 gr fat, 39 gr protein and 14 gr carbs ( 7 sugars). Thanks for the recipe and I'll definitely make this again! (Maybe with some rotel???)

Hilda, this is an amazing recipe!! I halved it since it is just my 6yo and I. I definitely would probably make a full batch. I have enough for dinner for both of us tomorrow. It was filling and just amazing, the flavors are fantastic. I love chili but have not had it for a while since I am on keto. This definitely was an amazing substitute and my 6 yo loved it. Thanks!
