Keto Peanut Butter Swirl Brownies

Are you a fan of chocolate and peanut butter doing keto? Well, these delicious keto peanut butter brownies will satisfy that craving easily.

It’s a recipe for low-carb peanut butter brownies because who doesn’t love the combination of peanut butter and chocolate?

I mean honestly, these two were meant to be besties and live side by side as far as I am concerned.

Am I wrong? Don’t you agree that certain foods were just destined to go together? It’s as if they bring out the best in one another by enhancing their flavor profiles.

I’ve always been a fan of the combo of chocolate and peanut butter. AND….I don’t see this love of mine changing any time soon.

These keto peanut butter fudge brownies are made extra fudgy with the addition of cream cheese in the peanut butter swirl.

Cream cheese makes these peanut butter brownies extra moist and further enhances the flavor of these brownies.

Do you know that before I made low-carb keto a lifestyle, Reese’s Peanut Butter Cups were a regular part of my life? Fast forward, and a real Reese cup hasn’t crossed my lips.

BUT….by no means that I suddenly stopped loving the combination of peanut butter and chocolate.

However, traditional chocolate and peanut butter desserts no longer fit my lifestyle.

So, a new healthier version needed to take its place.

Creating a low-carb treat, like these gluten-free peanut butter brownies gave this girl an excuse to enjoy chocolate and peanut butter goodness.

AND…it gives you another easy keto treat to try.

How To Make Keto Peanut Butter Brownies

Before I share my keto peanut butter and chocolate brownies with you, let’s talk about the quality of your ingredients.

To begin with, your peanut butter needs to be an all-natural variety, one that has zero sugar added. This will ensure that it’s low in carbs and that it doesn’t throw you out of ketosis.

When using all-natural peanut butter, remember to give it a good stir to ensure that it’s fully incorporated before mixing it into your keto peanut butter swirl brownie batter.

The quality of your chocolate also matters. Personally, I’m pretty partial to Baker’s unsweetened baking chocolate because of its rich chocolate flavor. You get great, consistent results each and every time with this brand.

The Best Sugar Substitute For These Keto Brownies

I have several options when it comes to which sweetener you can use in my recipes. I really like Lakanto Monk Fruit because the texture is spot on and because there is barely any aftertaste.  

It’s the one sweetener that never gives me an issue.

I’m also partial to Swerve an erythritol blend, although it does have a cooling aftertaste that some people dislike. Personally, it’s not an issue for me, and it’s why I am a fan.

You could also use the stevia and erythritol-based brand Pyure for most of my baked goods. But for some reason, I find that chocolate and stevia do not play well together, and generally, it produces a greater aftertaste.

It’s also doubly sweeter than most sugar substitutes; you may need to add half the amount the recipe calls for when keto baking

So in the case of this recipe, I wouldn’t recommend it unless you’re familiar with it and it’s not an issue for you. 

Lastly, if you can’t easily find a more natural sugar substitute, you can also use Splenda with great success.

I know not everyone would agree with me here, and I respect that, but in my book, it’s still better than regular sugar. 

Can I Substitute Almond Butter For Peanut Butter?

But what if you can’t have peanut butter? Or you’re looking for a way to further reduce the carbs.

Not a problem…. I’ve created this recipe several times with almond butter instead of peanut butter, and guess what?  Almond butter also goes amazingly well with chocolate.

So, if you have a peanut allergy or don’t include legumes in your diet, don’t let that deter you from this easy keto brownie recipe.

This delicious recipe for keto peanut butter swirl brownies combines the flavors of peanut butter and chocolate for one tasty low carb brownie option.

Instructions

Keto Peanut Butter Swirled Brownies

  1. Preheat the oven to 350 degrees and lightly grease an 8 x 8 square inch pan and line the bottom with parchment paper with a couple of inches of overhang to make it easy to unmold once baked.
  2. Melt the baking chocolate and butter either in a double boiler. Or in a microwave in increments of 15 seconds until fully melted. Stir well and allow to cool for 5 minutes.
  3. To the chocolate, butter mixer, add the sugar substitute, and mix well, until well combined.
  4. Stir in the vanilla.
  5. Whisk in the eggs one at a time and combine well.
  6. Add the sifted almond flour, baking powder, and salt and stir.
  7. Spread the brownie batter evenly into the prepared baking pan.

Peanut Butter Swirl

  1. In a large bowl using an electric mixer combine the cream cheese, peanut butter, sugar substitute, egg, and vanilla extract, until fully combined.
  2. Add spoonfuls of the peanut butter swirl to the top of the keto brownie base.
  3. With a thin knife swirl the peanut butter topping into the brownie mixture causing it to marble.
  4. Bake in a preheated oven for about 20-35 minutes, or until the center is just set but still is able to jiggle. Check for this consistency at the 20-minute mark and add more time if needed. But do not overbake. Note that the brownies will continue to set as it cools.
  5. Allow to fully cool on a baking rack for about 20 minutes.
  6. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 weeks.

Hi Hilda! Just made this recipe. It 's cooling on a rack right now but the entire house smells so Devine! I do have a question.. I let it continue to bake for quite a number of min over the maximum time listed. Probably 45 min or more altogether. It's looking very dark and began to crack on top, but still has a little bit of jiggle to it. I'm guessing they might be like traditional brownies and continue to bake after coming out of the oven. Thanks for another winning recipe! The batter alone was phenomenal! Can't wait to dive in!
